How to make the perfect Sultana Cake

This cake is quick and simple to make. It has a more open texture than a traditional fruit cake, making it a lighter alternative.
Ingredients to make a 15 cm 6 inch round cake.
225g sultanas
115g unsalted butter
115g soft light brown sugar
2 medium eggs beaten
175g self - raising flour
1 teaspoon mixed spice
1/2 teaspoon bicarbonate of soda.

Will baking powder do the same as bicarbonate?

Hi, i am not sure about this , so found this info - bicarb soda instead of baking powder? Bicarb soda has 3 to 4 times more power than baking powder, so if you need baking powder and only have bicarb soda on hand, you will need to increase the amount of acidic ingredients in your recipe to offset bicarb's power.
