I just made this cake and it is delicious..! I also mad a second one which was a variation of the first and I added dates, walnuts and apricots all chopped up instead of the raisins and currents and added some fresh nutmeg and sweet cinnamon and a tsp of Tesco orange flavouring and made with canderel for baking and it was also delicious combined with the base cake recipe.. Ty for sharing, can’t wait to try other variations..!!

Hi, thank you for the recipe. Are you using caster sugar or granulated sugar? I cant see a list of the ingredients also what temperature? big hello from Scotland in the UK xx

Hi, I used granulated sugar and I preheated my fan oven to 160.

Try coating the dried fruit in flour, it prevents the fruit sinking to the bottom the cake

You are welcome, the cake tin size i used is 8 inchs.
