Hello i am a home baker and today i made a beautiful Fruit Cake. This particular recipe is very much like the Mr Kipling Manor Fruit Cake but 100 times better as it's made at home from scratch! It's a really simple recipe and doesn't require soaking fruits or lots of ingredients. It's lovely and light and crumbly and goes really well with a cuppa tea. This recipe was ace, yummy,yummy everyone loved it and 2 cakes went in as many days. I would recommend this recipe. I did cover the top with foil after 45 minutes and not 1 burned currant, heaven I hate burned fruit. Now everyone one wants one of these cakes. Well done Anna, I will look out for more of your recipes.

I stupidly often don't trust recipes from cooks I've never heard of but I gave this a go as I love Mr Kipling's Manor house cake and this is bang on. Well done you and Thanks 10/10

As a retired chef who used to and still loves the pastry side of cooking I was always told to be light with your mixing of ingredients. I think that you would get an even better cake if you folded in the fruit, eggs and milk with a wooden spoon. Beating flour when wet activates the gluten which in turn makes the mixture tough (hence the cracks on top) and unable to rise properly. I am going to give this cake a try as I love farmhouse fruit cake just like Mr K used to make. Looks good.

so should the flour be last in and folded only as much as needed to be incorporated? Sorry if I have not understood, but can you write it out as you would mix it please. Thank you.

I made this cake and it truly tastes like Mr Kipling slices. I added a little too much mixed spice even so it is scrumptious and nice and easy to make. I just love easy recipes with no faffing about. Thank you Anna. As it happens I am actually having a slice with a cuppa tea as I type this!

Yummy. Extra tip - for an extra crunchy top take brown sugar cubes and grind very coarsely in a pestle and mortar. Sprinkle this instead of demerera. That way you get crusty bits of sweetness on the top ;)

Thiooks simple and easy to bake. What dry fruit would you recommend? I only have raisins and cranberries.

Sultanas are the traditional fruit (most juicy) or the dried mixed fruit you can buy in packs at the supermarket.

Hi Anna could you please tell me if it’s 180 degrees for a fan oven. Or do I reduce to 160 degrees for a fan oven Thank you

Gary 180 degrees is for a conventional oven so yes i would reduce the temperature for a fan assisted

hi anna, bit late to the party! i'm a bloke so be kind to me! been bread making since lockdown and getting pretty good! my dear old mum used to make a cake like this was my fav! so thought i;d give it a go, all fine but a little dry! so what's the fix more milk or 2 eggs!! thanks alan.

Hi Alan. This is such a great comment in so many ways! I'd never be able to do your mum's version justice I'm sure. However in regards to dryness you could add more milk or I'd be inclined to soak the fruit in a little tea until it goes cold. Then drain and use the plump fruit. I have fingers crossed for you. Best of luck. Thanks so much for your comment. I'm also a mum and hope one day my children would like my cooking enough to try it themselves. Very touching.

225g self raising flour 110g caster sugar 110g butter 225g dried fruit 1 egg 5 tablespoons of milk 3 tablespoons of demerara sugar Sorry I need a written recipe and this was the easiest way to do it

Yummy looking cake but far too sweet for me too much sugar I'll make it with reduced sugar the fruit has a lot of sweetness in them your cake looks so yummy I will adapt the recipe :) Thanks for nice video..

It's optional but gives the cake a crunchy topping. You can use less.
