Best white pizza I ever had was prosciutto, split asparagus stalks and paper, paper thin slices of whole lemon with fresh mozz and parmesan. Not only was it supernatural as a whole, but the fresh cheese and melt in your mouth roasted lemon were such an incredible combo that it made me resent the prosciutto a little (a first) for distracting me.

Cheers. You should try a Pizza Limone, where instead of the tomato sauce you mix/emulsify lemon juice with olive oil and thinly sliced garlic, then after you spread it you use pecorino romano and mozzarella cheese, and drizzle some oregano and black pepper on top. I had this in Milano, great white pizza.

I’ve had a couple of oonis running pellets and to be honest I never noticed any wood style effect on the pizzas so I switched to a gas / wood multi fuel unit. Gas is Incredibly convenient

Exactly my experience. The Ooni Fyra is a great, simple, outdoor pizza oven and fire management, while rewarding, is key to success. Because the pizzas cook so quickly, they don't pick up much smoke flavor (and pellets don't smell all that much). It's best to heat the stone to the max (I like 900º), then close the damper so the bottom cooks and the top doesn't burn. Cooking back-to-back pizzas requires reviving the flame - easier with gas.

@@intheframemedia gas definitely. You’ll get back up to temp in 60seconds as long as you’ve done a decent preheat before your first bake. Pellets - I had a nightmare to be honest. Just too inconsistent.

@@intheframemediaA variety of factors will impact stone recovery time. Ambient temp for one. The smaller Oonis have thin stones (not much thermal mass). You can't go back-to-back. In summer temps (~90ºF), the stone will lose about 200º cooking the first pizza. When you take out the first, get the flame roaring again while you make the second. About a 5 minute reheat works. I made 4 pizzas this way recently. If you're working alone, you'll want that time to prep your second pie. If you make them all ahead of time, they'll be sticky when you go to launch.

I lately had the best pizza I've ever had in my opinion, it was called "genovese" and it had white beef ragu with a light tone of white wine. After googling I think it's inspired on an italian pasta dish called "Ragu alla genovese"

I recommend trying potato pizza, it's actually quite awesome. You have to find a high quality, small, new potato, and then slice it really thin, so it cooks in the oven. I love a potato pizza with rosemary, olive oil, mozerella and bacon

My favorite combination white pizza is shredded whole milk mozzarella , chunks of fresh mozzarella, chunks of either foxglove/Camembert (or some mildly “stinky” cheese), Caramelized onions, fresh minced garlic and roasted whole garlic. Then top that with crushed pistachios, sesame seeds, Za’ater, fresh cracked black pepper and pecorino Romano for the bake. (Maybe some bacon, prosciutto or mortadella if you’re craving meat) Then when it’s finished, paint the crust with olive oil and top the crust with flakey salt so it adheres (I’m convinced everyone needs to do this to their crusts) Then grate some Parmigiana, add a few squeezers of olive oil (roasted garlic olive oil if you have it)(also can work with sesame oil) and top with flakey salt (smoked if you have it). If you have a spray bottle and can fill it with some vinegar (white distilled is the easiest, but pickled red onion brine is my favorite) and just spray a couple squirts onto the pizza (not crust) it really brightens the flavors. It’s a lot of different ingredients but if you’re a fan of these flavors it’s a pretty mind blowing combination that packs a punch of deep, sophisticated flavor.

Hey, not sure if you read comments. But I found interesting combination that I love to make at home for white pizza. I use Gorgonzola (or try other blue mold salty cheese), goat cheese with honey (I am in EU, but I am sure you can get some in US), Mozz +1 cheese of your chose - can be ricotta or maybe provolone. As a bonus I drizzle garlic oil on top and around when the pizza is done. It has very interesting combination of sweetness, saltiness, garlicky and cheese taste. I love it

I do a cream cheese, parm, lemon w/ some zest base with a drizzle of honey, and bacon potato and rosemary (rolled in garlic infused olive oil, which I also use as a drizzle at the end) and potato toppings, inspired by jamie olliver's white pizza, that quickly became my firend's and familly favourite, I do other white pizzas as well but that one seems to be the favourite

If you use a PH meter , you can bring the bulk ferment to 4.2 instead of doubling the dough size.

Another really great kinda white pizza, although it is a super simple dough without yeast, is the french/german Tarte Flambée/Flammkuchen. It was, if the story is true, invented, because the bakers in the old times needed to check the temperature of the wood fired oven. So the cheapest, simplest dough was made, to check if its ready. That's why there is no yeast in the dough, so no resting time. But trust me, it is still delicious. It has Crème fraîche as a base, with a variety of toppings. Classic from the Alsace region is bacon and onions, but a lot of people also add leeks. My favourite version for the topping is goats cheese, onions, leeks and pears. Of course there is always a bit of seasoning and maybe some herbs involved.

Hey! I would love a pizza recipe with spelt instead of wheat flour, my GF can't eat wheat so I am using spelt only for basically everything. Maybe even a series with bread, pizza and other recipes would be interesting :) Spelt is quite different with dough hydration and how to work with, but afaik it's a bit healthier than wheat.

It looks to me like the pistachios on the 'real' Emily were added after the cook, as they were green. Yours came out roasted which I'm sure was good too, but def looked more brown than on the original. Also do you let the balls rise after coming out of the fridge the next day and before using?
