Pesto-infused Gouda cheese takes this grilled ham & cheese to another level.
INGREDIENTS
PESTO
1/2 cup walnut pieces
1/4 up dried basil
1/2 tsp salt
1 oz (28g) Parmesan cheese, grated
1/3 cup olive oil
SANDWICH
8 slices white bread
10 oz (280g) Gouda cheese, grated
8 oz (230g) sliced ham
3 tbsp mayonnaise
DIRECTIONS
PESTO
1. Add walnuts, basil, and salt to food processor. Pulse until walnut pieces reduced to 1/8” (2-3mm) pieces.
2. Add Parmesan and pulse to combine.
3. With processor running, drizzle in olive oil.
4. Remove to a bowl and mix in any separated olive oil.
SANDWICH
1. Divide pesto in half, and spread one surface of each bread slice with it.
2. In a large bowl, toss the Gouda with the remaining pesto.
3. Divide the cheese/pesto mix among the eight slices of bread, spreading it across the pesto.
4. Divide ham slices among the sandwiches and assemble the sandwiches.
5. Spread half of the mayonnaise on the outer surface of the top piece of bread on each sandwich.
6. In a frying pan, cook the sandwiches, mayo-side down, on medium heat, for 3-4 minutes. Spread remaining mayonnaise on the outer surface of the top pieces of bread.
7. Flip and cook, covered, for another 3-4 minutes.
