Question: if I cook it longer on the stove, does it develop a richer/darker complexion and a different taste ?

It only affects the setting of the fudge. Too long on the heat & it can end up brittle & sandy!

Toffee: hard candy, caramelized butter and sugar producing a caramel flavor. Has a "hard crack" texture. Taffy: soft candy, many flavors typically fruity but not exclusively. The pulling method adds air to the taffy softening it. I used coarse sea salt so my Tbs will be different to fine iodized salt! I've put a note in the description in the recipe. Enjoy your fudge Suzie :)
