Just made this! First time for me making tonkotsu ramen. It was pretty good! Not sure if it was worth the 13 hours to make the broth though haha. I removed some of the meat from the pork neck bones to get a cleaner broth. I also used slightly less salt, maybe like 1.5 tbsp, for the tare since I think I saw your soy sauce was 38% less sodium. Also I used 3 lbs pig trotters and 3 lbs pork neck bones since it looked like you used a lot. But I ended up with a lot of broth so 1.5 lbs for each probably would have been good. Thanks so much for sharing this. I was looking for a simple tonkotsu recipe compared to some of the other recipes out there!

This is pretty much perfect. If you increase the heat on the broth, more of the fat will emulsify and you’ll get a silky, lighter color Tonkotsu broth. But this is a very well made video. My favorite shot was when you put the black garlic oil in the bowl and it started dripping towards the center. You need more subs 😊

I put 2 Tbsp of tare into 3-4 cups of broth. It depends on your personal preference if you like darker broth. If your tare is not salty enough you can add salt to the broth.

For me, I would use chicken or olive oil or avocado oil. Coconut oil has different flavor in my opinion.

Sorry it’s tonkotsu not tonkatsu. Two similarly called Japanese cuisine using pork, but they are vastly different.
