This comment is directed at all the rude, judgmental, and fairly ignorant remarks about our friend making these dishes here and how everyone thinks he's so "rude" or ill-bred even though they're judging him by their own culture's standards of etiquette and table manners. First off, he's holding the chopsticks Vietnamese style. Each chopstick-using society has it's own hold and method of using them. Chinese hold them towards the middle with a longer pair, Japanese towards the back with a shorter pair. Koreans use a medium-length metal pair primarily for putting food from the side bowls onto the rice and eat with a spoon, preferring to eat with the chopsticks strictly if it's a noodle dish and holding them similar to the Japanese manner. The Vietnamese method is like this due to it being seen as bad luck to accidentally point them just as would poke them into the dish, both being seen as identical. Thus why it's done this way. He's doing it right as far as he's concerned. Same thing with his seemingly sloppy eating habits by western standards which are by traditional standards polite for those Vietnamese not influenced by the French colonizers as it's seen as enjoying the food and complimenting the chef, as not making noises or showing it means one's choking down a terrible dish. This same thing applies to the Cantonese Chinese, the older Japanese (as opposed to the younger ones who say nowadays that the noodle slurping thing and such are myths that actually tend to be influenced by western culture through the Meiji Restoration and post-WWII occupation and rebuilding period), and more traditional Koreans (again, ones not influenced by western culture via things like the Korean War, like my ex for instance which is how I became familiar with stuff like this besides growing up in a town with a large Asian population and going to a college where almost half the students were Asian). So please try to be a little nicer and more understanding to the guy we enjoy watching for all the amazing recipes and interesting takes on some great food. Okay? :)

Dude. Where is your タレ (tare)? Don't add salt directly to your tonkotsu broth. Make soy sauce based shoyu tare, or strong dashi and salt based shio tare...That is going to add a new level of flavors to your soup and you can season easch bowl up to taste. Common ratio is one part tare and ten parts of broth. And try マユ (mayu) which is black garlic oil.
