You have to be kidding me, this is exactly what my mom cooks! The fish and bittermelon soups are replicas. The whole chicken is the same except for the addition of lemon grass. Also the filling you used for your spring roll is what we usr for eggrolls! The exact recipe of our eggrolls except for the outer layer LOL

A little tip for you Quang, from where I live which is Indonesia, we used to soak the bitter melon ( we call it "pare" in Indonesia ) in salt water to reduce the bitterness for 15 - 30 mins (depends how much bitterness you want in the bitter melon). I usually soaked it in 20 mins to get the perfect amount of bitterness, not too bitter, not too bland. and by the way, great video as always! cheers from a fan from Indonesia :D

Actually vietnamese food have no exact recipe, every family have their own recipe and no recipe is truely tranditional, people just pick up one recipe and make their own version of it so i don't think that he do anything wrong here
