Yes Sir! My kind of dish. Very hard to find that kind of pancetta here, but sometimes they have some nice pork belly at the store. I'll have to try this sometime, as I usually treat pork belly a bit differently. Nice job buddy!

This is a great recipe! I usually make my own pancetta (takes time but is so worth it), and usually I slice it super thin, or add to dishes. This is a cool way to serve it, which I'll def try when my next batch is ready. Great sharing!

Thank you! Yes I would make it too but Jamon and panceta are everywhere here and much better priced then back home. I normally use it as well very thin as the flavors can be very strong. Hope all is going well!

James, fantastic video. So glad someone has done this in English! Quick question on the pancetta. Is it best to use pancetta that has 'only' been salt cured? I have a load of homemade pancetta ready which I've salt cured and then hung dried. Seems that the hung dried pancetta may be a bit too dry? I recall in Spain a lot of the pancetta you get is 'only' salt cured (i.e can't eat it raw). What do you think? Either way I'm gonna give it a try tonight and I'll let you know :D

Thank you! This is a specific type of pancetta. panceta de soria, which is on the drier side and salted. You cannot have excess moisture or they will spit when you fry them.

Since you asked, I’m requesting German/Austrian hoppel poppel. Interesting heritage behind the dish. And some sour cream chicken enchiladas with rice, refried beans and chips with salsa made authentic TexMex restaurant style. You know the kind I’m referring to? Good cilantro in the salsa. Ooh! And perhaps make a (temperature) warm salsa too. The kind that comes out almost like soup? And I’m still hoping for arroz con granules with a spicy salsa (pico de gallo) with chips, and pork or some meat on the side, or mofongo… I imagine your TexMex recipes are incredible.

In Denmark we make this from salted pork belly, only it is ½ inch wide and ½ the lenght compared to yours. We serve it with boiled potatoes and a parselly bechamel. It's our national dish called "Stegt flæsk med persillesovs". I will try this version, looks like it's gonna be a bit more juice than our version. Thanks!

Yes! Pork belly is available and very inexpensive where I live. Pancetta is almost impossible without driving 3 hours.

Looks like great outdoor food cooked on charcoal from a slightly bigger campfire (regarding the cooking time - you need to have those "fresh" embers coming). I'd serve it with just raw onion and bread (not only because it's easy and efficient to haul that upside a mountain). Don't hesitate to ask me about the details of the "engineering" part if you are interested.
