You not ah Trini if yuh don’t buss ah lil dance when yuh cooking. Your dough is breaking because there’s not enough moisture in the dough so it’s cracking. Your dough is a little thick next time try using hot water in your dough and oil when pressing not butter. One last key is use a steamer instead of dropping in water. I’m a chef and I sell dozens of pastelles here in DC for the holidays. Best flour to use is PAN.
