I live in usa and seemed to have lost my touch for making pastelles. When I was in Trinidad I made them perfect. In usa I was using regular cornmeal. I made these for Christmas 2023, used my own recipe for the ground beef (Of course trini pimentoes, shadow benny/culantro etc). I used the Masarepa precooked cornmeal by Goya, followed your cornmeal recipe and my pastelles came out GREAT!!! Thank you for your channel and recipe. I SUBSCRIBED!!! Cooking with Natasha, I made your recipe for pastel today, girl , it is perfect and delicious. I’m in Miami, didn’t get fig leaves at the grocery, I used the freezer paper and foil. I’m very proud of myself, the recipe gave me 1 dozen, that’s all I wanted. Thank you and happy holidays to you and your family.

Thank you Natasha. This is the second time I tried to make pastelles. The first time was a disaster. This time even the banana leaves turned out well 😅. Thank you. Now I can volunteer pastelles when I am invited to gatherings 😊

Out of curiosity, what can be used in place of butter in the dough. I’m asking for someone with dietary restrictions.

Any oil of that person's choice. Butter or margarine gives the dough a luxurious and rich texture. Very smooth and silky. But oil will also work.

I don't have access to the citrus seasoning. What can i use instead?

Any all purpose chicken seasoning will do great. Perhaps Adobo seasoning, if that is your style.

you can use paprika powder instead i am allergic to rouccou hope this helps

you can make your own using olive oil and buying annatto seeds online and infusing the seeds with the olive oil on low heat.

Wrap in foil

...and then wrap in foil again. So, double wrap it in foil to make sure the foil doesn't rip easily and then you have a big mess on your hands! 😮

They're usually sold in Spanish groceries, in the freezer section, or sometimes Asian stores. Ask a manager before you go looking

I try it with the corn flour and all mine came out dry . I usually used cornmeal to make mine now I’m going to remake it tomorrow but with the cornmeal itself

Hi, 👋, I used Masarepa precooked cornmeal from the brand GOYA, and it came out perfect. In the past I used regular cornmeal and it was dry. Hoped I was of help🌿

Try the Asian/Caribbean stores in the frozen section.
