From Peru.... It evolved from I believe Moorish women preserving food in vinegar for Spanish Conquistadors..... But you use what you have locally and in South America there is citrus so evolve evolve evolve and CEVICHE!!!

kkkkkkkkkk where is the coriander?? cilantro?! are you kidding me. how much tomatoes... for what?! man . let's try a "tuna tartare" ... it's such better way to introduce it for your customers and try to do it in cubes(really fucking smaller ones) its really amazing. cooks much better, faster and without got the lime juice "beyond sour". hugs from a friend. from Brazil.
