The Turkish Delights that I have had so far in the UK have been soft jelly cubes covered in icing sugar but my son bought me real Turkish Delight from Turkey and the real stuff is a lot stiffer and sort of chewy and so much better. I want to make my own, this video just shows it being made.

I don't know if you can make the one in this video. The delights in this video were made in Safranbolu (birthplace of the original Turkish delights) and there are probably some tips and formulas that they're not disclosing. I feel you, I'm from Safranbolu and ever since I moved to the US, I cannot find the real delights anywhere. Only those abominations you mentioned. I'm thinking about giving it a try too, at least I can tell whether or not I got it right lol. One good test is that, if you squeeze them with your fingers, they should quickly return to their original shape. If they don't they're either not fresh or they are not real delights.

@@ibrahimkayikci2146 I would not even try to make this from the video, I need a proper recipe including ingredients and the method. I have found similar on KZbin but I don`t think that they are the real Turkish Delight. As usual, when you find something special, it is often made by the people that are experts and to replicate that is never easy. I will persevere and try other suggested ways of making it that doesn`t require industrial type of machines. Thanks for the reply.

I realize this is an old thread, but for what it’s worth, the consistency of Turkish delights is controlled by how long the cornstarch slurry is cooked. My experience has been that people in the west prefer a softer bite over the more traditional firmer chew. It’s not that the ones in the west are made with different ingredients necessarily. When it comes to food it’s just a matter of taste which is mostly subjective.

I worked for a cookie and Turkish delight company in my summer internship and production was massive. It was very hard to cook, cut, carry them around. I did cutting and packaging almost everyday. Even if there are machines around, human labor is required to maintain everything smoothly so that’s why traditional cookies and Turkish delight are expensive. We were also producing marzipan and some kind of sweet helva with spices. It was nice to smell like candy/sugar when I came back home though. There were always sugar in my sleeves. 🤣

You can buy directly from Karaköy Güllüoğlu. I'm in Western Canada and it gets here in a few days via courier but it's pricey. That being said, homemade is also tasty.

Being from Safranbolu, I can confirm when walking into a delight shop you are welcomed with this sweetest fruity/creamy smell. And the proper way to honour that smell is ordering a Turkish coffee. I miss it dearly😢

Turkish delight is one of the best sweets one can have. It is not easily available outside of Turkey. I am keen to know the ingredients used and the quantity. Would like to try making it at home.

Just watch some other videos on Turkish delight and you will learn the proportions. A home cook usually uses two pots one for making the cornstarch and water mixture and one pot for making the sugar and water mixture later you combined the two cooked parts and re-cook to make one you will see another videos. The ingredients used, obviously pistachios in the beginning and the green powdered pistachios which had been probably blanched to take off the colour so only the green part of the pistachio was left. Icing sugar and cornstarch are the white powder in the end. Cream of tartar is used in many recipes when making the corn starch mixture to boil. Nougat was used that was the white fluffy dough in the later batch. Saffron is the fine statements of the crocus flower which is quite expensive and makes the gorgeous red orange colour and it has a spectacular flavor. Salt was added a small amount to enhance the flavour of the Turkish delight. You could flavour it with whatever you have.The last batch with the nougat had a mixture of two nuts Pistachio and filberts or Hazelnut, saffron. Pomegranate the original grenadinen, it’s a popular flavour and colourant. Citrus is popular, orange and lemon. I’m not sure what the clear liquid was used in the last batch it could’ve been an essence. Orange blossom essence, or rose essence, you can use so many Western Europeans would use elderberry essence.

I’d love to try the pistachio ones. Not so much the rose covered variety. Roses smell wonderful, but their smell doesn’t inspire me to eat them. Plus dry petals have the texture of paper.
