Ingredients:
Egg white:
Soy milk/Plant milk, unsweetened - 1½ cups
Agar powder - 2 tsp
Black salt - ¼ tsp or to taste
Sambal:
Red onion, peeled, sliced - 2 large
Red chillies (mild to medium spicy), deseeded - 400g
Red onion, peeled, roughly chopped - 1 large
Shallots, peeled, roughly chopped - 2 pieces
Garlic, peeled - 4 cloves
Ginger, peeled - ½ inch
Seaweed (nori/wakame), finely ground - 1 tsp
Fermented bean paste/red miso/doenjang - 2 tbsp
Water - enough to blend
Canola oil - about ¼ cup or more for frying
Seedless tamarind paste (mixed with a little hot water) - 2 tbsp or to taste
Palm sugar/Coconut palm sugar - 2 tbsp or to taste
Iodized salt - to taste
Pandan, knotted - 4 leaves
Coconut rice:
Jasmine rice, rinsed - 300g
Shallot, peeled, finely diced - 1 small
Ginger, peeled, minced - ½ tsp
Garlic, peeled, minced - 1 clove
Lemongrass, white part, bruised - 2 inch piece
Iodized salt - ½ tsp or to taste
Pandan, knotted - 4 leaves
Coconut milk - 200ml
Water - 250ml
Fried mushroom:
Dried shiitake, soaked, squeezed dry, sliced
Iodized salt - to taste
Nori, finely ground - to taste
Egg yolk:
Medium firm tofu - ¼ block
Lemon juice - ½ tablespoon or to taste
Apple cider vinegar - 1 tablespoon or to taste
Prepared yellow mustard - ½ tsp or to taste
Maple syrup - ¼ tsp or to taste
Garlic powder - ¼ tsp
Annatto seeds, ground - ½ tsp
Nutritional yeast - 1 tsp
Black salt - a pinch
Iodized salt - to taste
Roasted peanuts, roughly crushed
Cucumber, small diced
Fried tofu
