Hi y'all! Welcome to GroFit with Tammy!
In this video, I will demonstrate for you step by step instructions to make Water Kefir - a probiotic rich drink. Preparation is simple and just takes a few minutes a day.

WATER KEFIR INSTRUCTIONS:
Ingredients:
- 1/4 cup sugar
- (use unrefined sugar, alternate occasionally for mineral enrichment of kefir grains)
- 3 tablespoons water kefir grains
- (if they are dehydrated, follow package instruction prior)
- water, to fill jar
- (filtered or spring water, at room temp)
Tools Needed:
- 1 quart size bottle
- (adjust measurements for smaller/larger size)
- funnel
- strainer (plastic mesh)
- for measuring: tablespoon & 1/4 cup
Step 1 - Mix:
- Make sugar water & shake to dissolve
- Add 3 Tbsp of water kefir grains
- Cover with breathable fabric
Step 2 - Ferment:
- Place bottle in non-drafty, warm spot for 12-24 hrs
- ideal temp should be 65-82F / 18-28C; 71F/22C ideal
Step 3 - Readiness:
- Look! grains will multiply, some may float to top, some may move about, some bubbles may be present
- Taste! kefir will be less sweet going towards sour; ferment to your taste preference
Step 4 - Strain & Drink or 2nd Ferment:
- Using funnel and plastic strainer, pour kefir into a bottle
- Grains, add back to jar in refrigerator or prepare a new batch
- Refrigerate up to 1 week, if you don’t finish it 1st!
Optional! Step 5 - 2nd Fermentation:
- Add fruit, herbs, any combination you like to strained fermented water kefir
- Leave out on counter for additional ferment
- If you want it fizzy like a soda:
- use a flip top jar
- Taste for preferred doneness
- Times will be different according to ingredients added & temperature of the room
Care of Water Kefir Grains:
- keep in jar in refrigerator in sugar water
- refresh sugar water weekly

Marker 9:03. Peeling ginger root with a spoon is really easy and much safer than the knife. Even the kids can do it!!

I don’t bother peeling ginger, I grate it or chop it with the skin on. If you’re worried about pesticides try to buy organic or soak in salt and vinegar water before using. I also store it in the freezer.

Hey, thanks for the thorough video. Just wanted to let you know that KZbin lowers the video quality of channels that aren't popular. An easy solution for this is to render your videos at 1440p (2560 x 1440 pixels) even if you're only recording at 1080p. Doing this will switch you from the inferior avc1 codec to the vp09 codec, which is better for retaining video quality. Another solution is going to your account playback settings and selecting "Always prefer AV1" as the default choice. AV1 is not the same as AVC1 btw. I haven't tried the 2nd method, so I can't tell you if it works. You can see which codec your video is using by right clicking on your video and selecting the "stats for nerds" option, it'll be near the middle

No, I don’t think that you can. That’s what I was told when I was first introduced to kefirs.

Hi there! Well, start out with a small amount, like 1/2 glass or 4 oz a day and increase gradually. If you're not used to fermented foods start with a little less. Just to give your belly time to adjust. From there you can have a couple glasses a day if you like. But try having it daily to see results. Let me know if you have any further questions. Good luck!!

Hi Noel- yes, adding in probiotics and getting different sources as well (other naturally processed & fermented foods and supplements to get a wide spectrum) are worth adding in my opinion.

Great video 😊 Do I have to put fruit in it to get it fizzy, or can it just ferment a second time in a closed bottle without ?

Thank you. You can. Strain out the grains & leave it (without fruit if you prefer) to get fizzy, but the flavour may get more sour or strong without the additional sweetness of the fruit. Have fun experimenting!

What I use: Brita water pitcher filter. What I should use from past research: reverse osmosis! 2nd choice Big Berkey Gravity Fed Water Tabletop Filter (but I just read a NY Times review that has sent me back to my research 😅) Open to your recommendations! I should also mention that the water quality gets tested in the apartment estate we live in. This should be a factor as you look into your selection of filter.

I need help in my grains. Every time i ferment theres this white film forming on top of the water. How to fix this

Well, from my experience it depends on the type of sugar I am using -different reactions to mineral content I think. You can skim off the top and keep tasting to see how the ferment is going.

I recommend to take small tastes during the process. When you feel it has lost the sweetness of the sugar water that you put the grains into you can stop at any point. The more fermentation time the more build up of good probiotic bacteria - but you need to want to drink it and let your taste acclimate. I still don’t drink it as sour as a close friend makes hers! 😅 Hope this helps. Feel free to ask more questions & good luck!

1/4 cups of sugar = 4 TBS of sugar. 1 quart of water is 4 cups of water. Thank you Tammy. Tammy, my 1 quart looks really big compared to your tomato bottles. Can you pls verify? I thought we are to put the water kefir grains outside to keep growing. Doesn’t putting grains in the refrigerator make water kefir grains go to sleep and not grow?

Hi. My tomato sauce bottles are less than a quart- you are correct. But your ratios are good. Feel free to make slight adjustments as you get comfortable with your kefir making.

Yes and remember not to use any metal with the grains. The bottles are repurposed tomato sauce jars 😉.

@@TammyHackman HI Tammy, thanks for reply. Well yes I think so. I think I am making it more complicated than it should be. I have learned to toss the first batch on new grain, and taste test for sweetness and sourness. I pour and refrigerate after the sweetness is gone. However, I dont see the grains getting much larger as I have seen in some of these videos.

@@ElRipper100 I’m glad to hear you are getting some kefir to drink! I just did a follow up kefir troubleshooting video. The grains featured in it have not gone back to normal fluffy size as of yet. But they are making good kefir. My grains were the ‘happiest’ with a roughly processed (chunks still in it) raw sugar from the Philippines -unfortunately I no longer have access to since Covid travel restrictions but I have found other sugars the grains have responded well to. Trial & error! Good luck. 😊

@@TammyHackman Yeah I think I am learning. I usually keep the grains in the bottom then refill jug with water. I was out of cane sugar so used som white sugar, now after a few days I see this thickness about halfway up. What is that? Is that tiny bacteria growing or ?, it looks thick and clear, as I roll the jug I can see 2 different densities in it.

I wonder if dehydrated kefir grains are the same as kefir culture? Also can’t a probiotic be used to activate the water, what’s the difference between kefir water and kefir probiotic water ? Anyone that’s able to clarify I’d be interested. I just bought some kefir vegan water culture and I think I could have saved my money and just used probiotic capsules :/
