This reminds me of spending my summers in Mexico as a kid, drinking aguas frescas of all flavors, but getting a cold mango on a stick with salt, lime juice, and chilly powder (Tajin) was the best. I would eat and drink myself sick and then eat and drink some more.

I used to live in El Paso, TX when I was young. We would frequently go to Mexico, and I remember seeing the huge glass containers full of agua frescas. I always wondered what they tasted like. Thank you for this recipe. 😊 I’m going to the grocery store to buy a watermelon. 🥰

Sounds great. When I was growing up in Duncan Oklahoma, my Dad would lease about 100 acres to grow crops, and one was black diamond watermelons, probably 25-40 acres. We kids would ride on the back of that 3 or 4 bottom plow to help break through. And I remember the smell of the soil and watching at my feet as that dark rich bottom soil was turned over. They get huge and are almost all heart. We would put one in a tub with ice and eat 'till we were likely to burst. One year we entered our biggest in the Stevens county fair, and won the blue ribbon. I think it was about 60 pounds. P.S. Someone mentioned vodka and it reminded me that some of the older cousins would cut a plug out of one and dump an entire 5th into it, and let it sit for a few hours on ice. And the high school football team, The Duncan Demons, would raid the field at night every year. Dad would get so mad. Even though he played on that team back in the '40s. c1960s. Good memories. Hard times though. My dad was a welder for Haliburton, Navy trained during the Korean war. So the farming was to supplement his income. We sold produce, milk, butter and lots of eggs. Dad was gone alot. All across the country. So us kids, 6 of us, took care of the farm. Would like to hear stories from other rural folks. We were the real life Waltons, Grampaws family was the family from Shenandoah, with Jimmy Stewart, as there was 12 kids. Yup, I got hundreds of cousins, all over these United States.

Speaking of pickled watermelon rind, my Gramma loved sweet pickles. When she finished eating a jar of any sweet pickles, she saved the leftover juice in the original jar in the fridge. Then in watermelon season she saved and chopped the rind and used her collection of leftover pickle juices to pickle her rind. Easy and free.

you might find you need to water it down some as watermelon isn't very acidic all on its own. you'll want to cut the acid of whatever you use by quite a bit and then add flavors that compliment your main. I might try papaya with lime following this same form. it reminds me of the makeup of papaya sorbet.
