I even filter the wine after this point but I haven't filmed that video because it requires what some might consider "pricy equipment". 😂 But I think it's worth it. Especially considering the fact that wine only gets better with age.

The difference between racking and filtering is the look of a washed car and a waxed polished car. I have a filter and I use it for fining. It doesn't make the wine taste any better but it looks better and is much more impressive when your bragging to friends and family members about your homemade wine. 😂 check out my story board on Instagram instagram.com/s/aGlnaGxpZ2h0OjE3ODcyMjI0Nzk5NjE4MzUw?story_media_id=2275908432375396535_1614440781&igshid=MTc4MmM1YmI2Ng==

Unfortunately, this is probably going to be the last video in this series. I originally planned on filming the filtering and bottling stage, too, but I'm not getting the views. This project has been fun but difficult and very time consuming to film because of the duration of time wine takes to ferment and process but, I have over 130k subscribers and I can't even get 1k to watch so, I'm done.

I will tell you, though, the filtering I'm doing isn't cheap. Im new ro this hobby and im learning every time i make a new wine, but why does the different wine flavors all smell tue same and not like the fruit that it was made from?? Also will the wine taste like the fruit after it ages?
@PMGK
@PMGK 5 ай бұрын
The goal is to make Alcohol and this is a bit of a forced process to get the fermenting process to speed up with the added yeast and sugar, which gives a higher Alcohol content and in turn effects the smell. Adding water makes the wine go farther and effects the taste and smell as well, making it less concentrated. Straight fruit juice only will yield a stronger smell and flavor that can be more accurately identified when the wine isn't watered down. Try making your wine with more fruit juice and no water next time and you will see a noticeable difference. 🥂

@PMGK
@PMGK 2 жыл бұрын
The longer it sits, the more it settles so rack once, at a minimum and, if you're patient, a 2nd time if you clarify using bentonite. If you use a fermenter, you don't have to rack at all. The sediment can easily be removed in the catch jar at the bottom.

Although multiple rackings will help clarify the wine, won't that unnecessarily expose it to O2 and make it age prematurely/potentially cause it to turn to vinegar? I used to rack multiple times, but then found out if I let it settle for about 3 months it practically clears itself. Have thought about trying a fining agent like bentonite clay too. Great video!
@PMGK
@PMGK 2 жыл бұрын
It would take hours of exposure to cause any real damage. Though you're correct about the wine clarifying itself to some degree, the bentonite still helps the clarification. So does fining, for that matter but I haven't filmed anything about filtering yet.

Yes you can but this really is only a concern if you're back sweetening and introducing more sugar for the yeast to consume. Most of the yeast will be gone anyway, as it settles on the bottom when you rack the wine off.

I am new to winemaking and have watched A LOT of videos. Yours are, by far, the best. Just one question - Is there no need to let the campden and potassium sorbate sit a day or two before back-sweetening? I am obsessed with the fast fermenter. About to go buy one. And a wine whip. Thank you!
@PMGK
@PMGK 2 жыл бұрын
I've never had in problems adding the 2 together. I also filter my wine after this stage, too but it's not necessary and I haven't filmed a tutorial doing that yet. I now have 3 fast fermenters. I keep two of them full and one empty for filtering back and forth. So you might want to consider buying a second since you're buying one anyway.

I've bought Bentonite before and I threw them out because I thought it didn't work for me, I just remembered that I didn't know how to use it! I make 6 gallon of red wine. How long do I need to keep the bentonite to clear the wine completely?

If you're talking about the jar on the bottom of the fermenter, there is no special name for it and it's just a standard Mason style jar fitting.

would pectic enzyme help clear this up?
@PMGK
@PMGK 4 жыл бұрын
It is suppose to help with the pectin haze, yes. I usually add it before to help the color and yield juice extraction but it is also added, by some, afterwords to encourage suspended solids to precipitate out of the wine. 🍷

How much of campden and potassium sorbate did you use per gallon? Thanks for the video! Nicely explained.🙂 All wines with these preservatives and if stored properly then what's their shelf life? Some say 2 years some say 10 years some say forever... I never get a correct answers on Google. 🤪
@PMGK
@PMGK 3 жыл бұрын
That's because there are many variables to be considered for shelf life storage; sanitation, storage temps, sunlight etc. 1 Campden tab and is good for 5 gallons of wine and 1/2 tsp of Potassium Sorbate per gallon.

---Help Requested--- I brewed Cranberry wine about a month ago with ' real' brand cranberry juice and regular yeast. Brewed it in dark atmosphere with proper airlock facility, after a week i filtered the yeast out of the brew via muslin cloth. For few days i still saw bubbles rising from the bottom in my brew, it's been a month now and i haven't consumed even a sip of it. Today i saw some kind of weird thing at the bottom like you get layer on milk (can't explain in words) i took a sip and it kinda tastes harder than before. Is it just aging or has the brew been ruined, now i wanna consume the wine but don't know whether it'll get me into hospital or high???

I've never heard of anything like it, quick arm yourself and put on a pot of coffee! Kidding ,sediment can have layers , and even so a bad ferment just tastes sour its not toxic

Hmmm, I like your three videos here, but I was thinking, and this is for a filtering thought, what would happen to a wine if you filtered with plain yogurt and drink the whey, like Soma is made? Also, I make vinegar, and bubbly vinegar from mushrooms 🍄.
@PMGK
@PMGK 2 жыл бұрын
I have never tried that with wine. The next step, honestly, is to use an actual filtering system. I have one but I haven't filmed it because it results in advertising the company that makes the filter and they're not willing to compensate me for my time.

Amazon. A product called "Fast Fermenter" makes several different sizes. This is a 3 gallon and I own 3. I use 2 at a time for red and white wine and the 3rd for racking but, a nice clean bucket works great for that too. 🍻
