I made some a few years back. Instead of one cup of sugar, I used 3. I put it in my closet for a month, then racked it into an old 750ml Vodka bottle. I put it back in my closet and forgot about it for 3 months. When I finally remembered it, it had become a pretty shade of clear red. I pulled it out, uncorked it and drank 3/4 of the bottle. It went down smooth... and got me so drunk I couldn't see straight, walk straight, or speak straight. I was drunk before I knew it.

My favorite thing about youtube is that no matter what the topic, you're always surrounded by experts who offer helpful and considerate advice in the comments. They are so smart! This hooch sounds awesome. It reflects my brewing philosophy: "step 1: put some crap in a bucket with some yeast. step 2. wait. step 3. party!"

It's a bottle of juice. You empty out a little and you add sugar, a lot of sugar then a packet of yeast. Cover it but dont seal it. Let stand for 2-3 weeks. But the longer it stands the better it is. :) Happy Fiesta!

Tried this and it worked very well. Tastes great! I have made wine, beer and hard cider but this has been by far the best. It only took 1 week to ferment at room temp (in Scotland). I got 4x1L of Welches red grape juice on a deal for £8. Added the juice to a 1gall demijon and added 17oz sugar, 1tsp yeast nutrient and winemaking yeast (well actually it was whatever was in a few mls of the hard cider i was fermenting in a different demijohn). Fermented like crazy. I think the key to avoiding sourness is to know when to stop the fermentation. Taste it and see if its to your liking...do not leave it for too long. Use a hydrometer. They are dirt cheap.

If you buy the generic juice, use bread yeast (bought in a larger quanity) and buy the generic sugar you can get the cost of these down to about 3$ a bottle. Since a 48 oz or 1.5 quart worth of juice is 1400ml+ that makes your average "bottle" of wine only costing about $1.50 USD. Plus its fun to do and usually tastes better than store bought wines. :D Good stuff.
@samljer

while that will work, bread yeast brews need aging to clear the bread taste (which is fine) but also, flocculation changes from packet to packet.

When I make mead which is basically wine sweetened with honey I let it set at LEAST 6 month and often as long as a year. Over time it mellows and the flavor is so much better. 14 days is barely enough time for the yeast to finish working and not time at all to mellow.

The reason your wine was bitter is because you let it sit too long, the yeast had converted all the sugars to alcohols and then oxidized, which means it was turning to vinegar. lol, one week is plenty time to ferment. If it were me, I would add half a cup of corn syrup as well for addition enzymes for the yeast to be extra happy ;)

Make wine any way you can! Interestingly, a fermentation with grape skins offers natural protection, as they skins form a cap that protects the wine beneath. Thus, you don't have to ferment in a container with a small opening. Real grapes and juice without any preservatives are available nationwide and per volume and quality offer an excellent value.

I got started brewing applewine with baker's yeast. I used ActiveDry bread yeast, and have been told not to use the fast rising stuff. Idk, but I used 1/2 a packet for one gallon with good results. I really don't think you're going to ruin a batch by using a little more or less, but I can't be sure. My friends loved the stuff I made! Just give it time to really clear. That helps keep the yeast flavor from overpowering the wine. I say, Just go with it!

If you are using bread yeast don't shake it up after adding it to the juice/sugar, and cut the acidity a little bit by adding 4 to 6 onces of water, this seems to reduce the the bitterness. Thanks for posting this video and good tip on the bottle top.

My attempt to make wine, fermentation lasted about seven days and had slowed to a bubble in the airlock every ten to twelve seconds, so I racked it to the second container. It is not clear because of the bakers yeast, but I decided to keep a bottle full to try last night, it was a little dry but good. I got drunk as hell but goin to let the rest sit for awhile, bad after taste when I grabbed a beer to drink.

Balloons work fine, I’ve been making a lot of wine using this method for a year and the ballons don’t touch the wine ever, just make sure you put some pin holes in your balloon so the gas can escape. Also 2 cups of sugar in that size juice container will make a sweet wine. If you prefer a drier wine I recommend 1 cup sugar. I use half a Lalvin yeast packet for that size container. I’ve used Red Star (from Amazon) when I couldn’t find Lalvin anywhere. Bread yeast works but it won’t taste the same. After 3 weeks, your wine should be done fermenting. To stabilize the wine (stoping fermentation and ensuring it doesn’t start up again), I transfer the wine into sterilized mason jars. I boil water in a large pot, remove it from the heat then I put the lidded jar in the hot water and cover the pot and leave them in there for 7 minutes. The heat will kill the yeast and naturally stabilize the wine. The great thing about this is if you find your wine is not sweet enough you can add sugar and it won't start fermenting again. This stabilizing process will also make a clear wine. After7 minutes, I store the jars for about 7 days then I transfer the wine again into clean sterilized mason jars or bottles leaving the sediment behind. You can drink the wine then but I like my wine super clear so I give it another couple of days to a week and then it’s ready. The longer it sits the better it is. Make sure you keep you wine in a dark area throughout the whole process. Test out different juices and various sugar ratios as some juices like grape are sweeter while others like apple are less sweet. Just make sure your juice is 100% and contains nothing else than juice (from concentrate is ok), water, sugar, ascorbique acid and citric acid which are there to maintain colour. Make sure there are no other ingredients like sulfites because the wine will not ferment. Enjoy the savings and the pride of making your own wine.

If there isn't enough room for CO2 to escape, the wine spoils, but if the ventilation is too large, it turns to vinegar? Seems odd to me, please clarify :D

this is like the easiest wine making process I've ever come across with and the only one that's like this.....so I've decided to use this method for a project and cross fingers on how well it goes.....but I used a balloon as recommended by our professor......hope it works!!!!

Yes, i have acutally mix amd match flavors. notice when you make wine this way you have to empty some. What i do at time is get juices that complement each other and i have an empty container and put it in there for a mixed wine batch.

No but trying to make distilled alchohol (moonshine, vodka, etc) can. that's the only reason it's legal to make wine and beer but illegal to make spirits
@slopcrusher3482
@slopcrusher3482 6 жыл бұрын
No, if you distill it ( dumbest thing a brewer can do) the “ head” contains all of the methanol, since distilling makes it pure alchahol and methanol, which is what will make you go blind, and cause organ failure
@jbrunson1949
@jbrunson1949 6 жыл бұрын
I have a different reason that I believe about being illegal, I firmly think it is only about the TAXES, if you look at the price of legal alcohol in stores, it is easy to see how much taxes are being lost to the government, from illegal distilling - moonshine, AFTER all think about it, from the beginning of this country-US, there has always been fighting over TAXES, people don't like it so rebellions have been quite a part of our lives. Just my view, yes I agree that the heads can cause blindness and other types of poisoning, but most people that would distill would and do know to get rid of the heads. Especially the real moonshiners, they don't want a bad product that people won't buy, there purpose is to sell as much as they can, and have returning customers.

@dinosaur4 I don't think so if you filter it. The store grape juice is Concord grapes. They say to get tasty wine out of it you have to bottle and store for some time. At least 6 months, but 1-2 years is optimal, all that wild taste will go away with aging. Ideally you want to make a few gallos every year, store it, and star consuming in the 2nd year so you allways have relatively good wine for like 1-2 dollars per bottle.

I tried it over a decade ago and used a Big 5 gallon water jug and a condom. One tip you have to have enough empty space in any size container to account for the excessive fizzing and foaming that will likely happen. Also I am now trying the condom with one pinhole in it it seems to be working better than the one that has two pin holes in it that just stays droopy. Also one mistake I made was that I emptied it into a 2 l jug plastic bottle and forgot it in my closet where I had other valuables and during the middle of the night one night I heard a very loud explosion I didn't know what it was and didn't care to get up but in the morning I found my closet looks like a war zone. If you don't bottle it tight enough in glass this can happen if you use the strong enough container this is how you get sparkling wine I believe. Otherwise you should wait for the fermentation to stop or force it to stop by putting it in the freezer. Also I did notice one day you're concerned about the condom that it did stop expanding before I put holes in it and it actually began to suck back into the container. This time I'm using the small juice containers like you are using I have already not left enough room and I'm having to clean condoms but I left the lids on tight with a small knife hole and the top of the lids and I hope that this prevents the latex from being able to go back into the bottle backwards. By the way I didn't shake it up periodically but I did once and noticed it reacted heavily after a few weeks. I never tried it because I was squeamish but I had a bunch of lifeguard friends who didn't have money for booze I told them I was afraid to drink it they said they weren't afraid so I gave it to them. The next day I asked him how it was they smiled really big and said great.

@jakeanddar a hydrometer is easy to use... i use one for beer and wine and i also use one when making maple syrup...they are exactly the same, except the one from the home brew supply is marked for alcohol...the math is already figured out...you just drop it in the wine and it should float..you read the line it is floating at to see the sugar content...you do this before and after fermentation...this will tell you how much sugar was turned into alcohol!

A ballon is used to absorb the excess carbon dioxide made when the yeast produces alcohol in fermentation. it could potentially explode with just a cap and also the pressure could denature the yeast. Just FYI the yeast uses the glucose(sugar) to undergo fermentation so more sugar=more alcohol % by volume

@qwerty101ize I have never used a ballon,however I would just leave it untouched for at least 7 or 8 days,(there will still be a small amount of gas seeping out through the holes in the ballon),then take off the ballon and transfer it to a clean sanitized jug,then rinse and sanitize the original jug and pour it back in to that jug,cap it tight and leave in a dark environment for at least another week. Thanks

Not at all. You probably want to keep it in a dark cupboard anyway to avoid sun-strike. The only smell you'll get is if you actively smell inside the bottle.

Also after the balloon has deflated, let the wine sit for a few more weeks to let all the yeast sediment fall to the bottom. Then transfer the wine into bottles using a Siphon Kit. Label Peelers has a lot of stuff for homemade wine and beer. Enjoy some wine!

How many grams is one glass of sugar. And how many grams is the yeast?
@jakeanddar
@jakeanddar 14 жыл бұрын
@joejumps4fun It should be still bubbling slowly,however if not at all anytime now would be OK to transfer and replace after you have cleaned out your original jug. I would seal it tight and store in a dark place at room temperature for at least two more weeks as there will still be a minuet amount of yeast in the wine,it will probably gain another half to 1% alcohol content in 2 weeks. Once complete chilling it is an option,you can also drink it at room temperature. Later

@new01 14 жыл бұрын
@coronapeacock lol, yeast is perfectly fine to eat it won't make your stomach explode(you might end up burping at most), if you leave it in most dies off as the alcohol content gets higher. I made cheap cider a couple times both had pretty high alcohol contents, very dry, i'd say about 12% by volume.

Jake, well done. I noticed that you used a whole packet of yeast/bottle. I have been using 1/2 tsp per bottle. Maybe I need to use the whole packet. When putting the lids on, to see if it will relieve pressure, just squeeze the bottle and listen for the cap to move. You can hear it (click-click). I do not use tape on my caps. I liked your video. Thanks for no bad music.

@jbrumbaugh100 Yes,i've heard that some fruits and vegetables contain natural yeast I think in the skin,I was told that if you take a bunch of grapes,nothing else,throw them in a container,place a cover on it and let it sit for a few weeks in room temp. it is supposed to create natural wine. I'm not sure how the procedure goes so I have never tried it. Thanx

I'm not sure this will work, but using a crazy straw with a bit of water in it for the air lock seems like it should be better then just unscrewing the lid a little. The production of alcohal is an anarobic reaction from what i understand, and just unscrewing the lid would cause a lower abv.
