How to make Yakgwa - melt in your mouth Korean Flower Honey Pastry!

Have you ever tasted something so delicious that you just can't stop craving it? I don't make this too often because I just can't help eating it!!
If you love a sweet treat that just melts in your mouth, then you’re sure to love my Korea Yakgwa. Yakgwa is a traditional pastry made from honey, sesame oil, honey, rice syrup and flour (sometimes soju but not this recipe) and it's been enjoyed in Korea since the 16th century. The texture is slightly crispy on the outside then soft, crumbly and moist on the inside so once you start chewing, they will totally melt in your mouth!

In this video, we'll show you how to make your own delicious yakgwa at home! And it tastes SO MUCH BETTER than ones you buy from stores! You'll learn what ingredients you'll need, the steps of making the pastry, and the secret to getting the perfect melt-in-your-mouth texture.
This Yakgwa is also called Chapssal Yakgwa as a bit of sweet rice flour is added. The other kind is called Gaeseong Yakgwa 개성약과 and is typically not made into this flower shape. I will have a video of that soon.
INGREDIENTS
4-5 cups Vegetable Oil or any oil good for deep frying
Dry Ingredients for dough
- 200g All Purpose Flour (200g = 1.5 cups)
- 30g sweet rice flour (or mochi flour) (30g = 3 Tbsp)
- 1/2 tsp salt
- 40g sesame oil (40g = 3 Tbsp + 1 tsp)
Syrup for Dough
1/4 cup water
1/4 cup sugar
2 Tbs rice syrup
Ginger Honey Syrup (for soaking)
1/2 cup rice syrup (jocheong 조청)
1/2 cup honey
1 cup water
1/2 Tbsp grated fresh ginger

I LOVE THIS RECIPE!!! I am fairly new to Korean culture (our 26 yr old daughter got me into Korean music a year and a half ago~love all the genres, rock, pop, jazz & of course have been watching Kdramas for the same amount of time). So that said, Who has NOT seen Alchemy of Souls? Where have you been?😂😂That drama is where I saw these honey cookies for the first time and my cousin and I (she is a superb cook and baker) have been searching for the perfect recipe for these wonderful cookies. We found miniature versions in our favorite International market but there's NOTHING like homemade!! And this recipe is so good! I love to cook (from a family of cooks & food lovers😂) and grew up with a lot of international friends (Japanese, Portuguese, Cuban, Italian) so I have been exposed to a lot of different foods and techniques in various recipes. So one day while beginning my culinary journey into preparing and cooking some of the Korean dishes I see in Kdramas I found your website! I have tried so many of your recipes and I have to say ALL of them turn out perfect! My husband and daughter are really enjoying everything and we love that it's all so healthy as well. Anyway, super happy to have found this honey cookie recipe and your wonderful KZbin videos. You do a great job of explaining and sharing your wonderful culture thru some amazing dishes!! My friend just sent me these from Korea (I’m from Canada) and WOW what a unique delicious treat. I wanted to see if I could make it myself at home. I’m a good baker but haven’t always had the best luck frying pastry, we’ll see how it goes.

@@Kimchimari my cat Cleo is 18 and it's the same! oh, and thank you for letting me know that recipe is already up! it looks pretty amazing with the layers. the science of why the soju works (alcohol reduces gluten formation and provides water to steam and form the puffiness; the sesame oil makes the layers separate) also totally makes sense to me.

@@DianeH2038 I knew you would get it! Pretty ingenious how one decided to try using soju in the dough and some decided not to use it. Two recipes resulting in very similar flavor but very different textures!

No, sorry, they are totally different things. Mirin is a sweet wine. If you want a substitute, you can try using corn syrup instead.

Thank you for the recipe! They say we shouldn’t heat honey ~ it makes honey toxic. Any explanation for this point? Thank you in advance

Well, I'm not a honey expert but from my quick research, there are some chemical changes that happens and it no longer may have the benefits of raw honey but I don't believe it will be toxic. If you are worried about it, just use something else like corn syrup or some other sweetener that's similar to honey in consistency and sweetness.

@@rafal_kn Oh ok then you can just use ap flour in this recipe. It will kind of crumble but may be ok.
