Yakitori or 焼き鳥 in Japanese language, is a type of skewered chicken in Japanese cuisine. Preparation of yakitori involves skewering the meat with sticks made of steel or bamboo. Once done, they are grilled over charcoal fire but for home cooking, you can consider grilling them in an oven or airfryer. The effect? Not as fragrant compared to charcoal grilled yakitori but definitely still super yummy because of the sauce over the chicken. Yum!

Ingredients:
Makes 7 skewers
1/3 cup of water
1/2 cup of sake
1/3 cup of light soy sauce
1/3 cup of mirin
1/2 onion
1 stalk of scallion (green part only)
1 tablespoon of brown sugar
2 pcs of chicken thigh (weighing a total of 420g in total)
7 bamboo skewers (soaked in water for at least 30 mins)
2 stalks of scallions (white part only)
Bake at 220C for 20 mins
On the 10-min mark, take the yakitori out and brush 2/3 part of the sauce on each skewer.
At the end of the 20-min, after removing yakitori from oven and brush the remaining sauce on each skewer. Serve hot and enjoy!

Hi Spice & Pans, thank you for sharing the recipes. Always enjoyed to learn some cooking tips & so far, they turn out great! Just one thing, I don’t seems to get the shiny texture for this particular recipe, i tried twice with the ingredients followed accordingly, but failed twice. Any advice here?

you can also use frying pan, just add the sauce at a later stage so they don't burn. using the oven for barbecuing results in taste and texture that are quite different

Hi thanks for the video. For chicken thigh i always wonder if to remove the white veins (i do it ), noticed that u didnt remove. Is there any diff? If i replace the scallion with asparagus will the baking temp be the same? Thanks

Hi Wendy. You don’t have to remove the white veins but if you see one that’s really thick, feel free to remove it. Yes you can use the same temperature if you replace the scallions with asparagus 👍🏻👍🏻👍🏻

Hi Steph. Yes you can use normal cane sugar to replace brown sugar. You can just go for the cheapest sake you can find since it’s used for cooking. As for mirin, I got it from Daiso. Hope this helps.

Hihi. You can use the same temperature used in this video but please check on it every now and then to ensure the chicken skewers are not burnt. You might need to shorten your skewers too since space is usually a constraint when it comes to airfryer. Happy cooking! 🤓🤓

Great recipe as usual! A couple of questions: 1. What was the reason you used bake rather than grill or fan grill; is it to avoid burning the chicken? 2. Would this recipe work with pork belly (skin removed), and would the pork require a longer cooking time? Thanks.

Hi FarHorizons, so sorry for our late reply. Yes, the cooking for pork and chicken is about the same. We didn't use a grill or fan grill because we don't have one. Haha. We figured most family should have an oven so we chose to use the oven instead. Yes you can use pork belly. They should be really yummy too. Happy cooking!

Roland, wondered why there's no need to season meat before grilling.Won't taste of meat b less tasty.N is there a need to oil meat before first grilling😁

Hi Grace. Yakitori traditionally is about tasting the original freshness of the meat thus no overly marinade is needed. And also the meat pieces are small enough and during basting, the flavour of the sauce will “stick” on the meat. I dun like to “oil” the meat for this dish as oil will “ burnt” the yakitori sauce too fast as the sauce contains sugar. Hope this explains 🤓🤓

Hi Mimoocho. Yes you can since mirin is slightly sweet. The purpose of sugar is to help balance out the saltiness of this sauce. Hope this helps.
