That's not quite right, though it seems like her method works well. The Americas didn't actually have yogurt until the Columbian exchange. The original yogurts were created in Central and Eastern Asia, when nomads transported milk in containers made out of animal stomachs. The bacteria in the stomachs created the original yogurts.

@@benjaminmunyan8613 You can also buy probiotics in pill form and add to capsules to it. The kind that u can open the capsules and the powder is inside. That’s how I first learned to do it. U can even do it with non dairy milk like coconut.

Making stuff from scratch is my thing, but have not seen a starter made. Bless your heart for passing on what you know! Many decades ago i vaguely recall making quarts of yogurt with 1/4 t of Dannon, which worked just dandy, but after all these decades i wanted to refresh my memory. I did not expect to learn something brand new! I LOVE learning something new!

Sweet Adjeley I have been making yogurt for 5-6 years now just last week I forgot to save starter to make more and decided to follow your starter recipe from chili peppers. In just 20 hours my starter looked fantastic and after my 2nd batch my yogurt smells and tastes AWSOME. Very nice work. Thank you for sharing. Thank you for sharing. Very nicely done and clear and thorough presentation. Thanks again. I make coconut yoghurt using coconut milk and probiotic pills, sometimes with store bought coconut yoghurt as starter. I just warm up canned coconut milk to lukewarm and add it to a clean jar with 2 probiotic capsules emptied into the jar. Close and shake well the jar and leave it in the counter. 2nd day it should be ready. Open the jar to let air out each day.

A bit of information. Capsicum-containing fruits such as chilli, are often rich in various lactobacilli. These natural bacteria create a starter for lacto-fermentation of milk. In addition capsaisin from the chilli appears to increase the metabolic rate of the lactobacilli

You can also use tamarind pulp or just the chili stem as a starter. Heating the milk kills bacteria but also breaks the protein bonds, so they can be reformed with the new bacteria.

Very good, I made it, I first boiled 2 litters of milk, I added 2 red chili peppers with the stem, let it sit in the oven overnight, in the morning, it was extremely good. Blessings to you.

I am amazed like a lot of people and very happy to know how to make yogurt culture. When I make yogurt from store bought yogurt, I freeze some right out of the oven, before cooling it. I think this make the yogurt culture last for more than 1 batch.

I just made this and I am very amazed! I actually tried this with powdered milk and chili peppers and after 12 hours there was no change so I thought it wouldn't work but I kept it in the oven and added some steam using hot water for another 3 hours and it worked! I'm now fermenting the 1st batch, I only used a cup of milk in case it tastes like chili peppers (I used a LOT lol). Thanks so much! Will use this in my cakes ❤️

@@PolaCocina Hello! It probably was too cold when you tried because I think that's what happened to me too (despite it being already warm here where I live). What I did for mine was I put the bowl of milk and peppers on the middle rack of the oven then put boiling water in the tray at the bottom rack. No secret really for keeping the steam going except having to change the hot water again, I think I changed mine twice in three hours 🤣 hope it works for you! ❤️

I have looked at various other videos on making yogurt ... this one is the best looking yogurt. This was the first video I looked at which gave me the confidence at even trying to make yogurt. I am lazy and did not want to use an ice bath that step seems very important as none of the other yogurt videos used that method. Please do not take offense I looked at other videos ... I try to gather as much info as possible about things so I get it as right as I can when I do it. Thank you sooo much for this video ... for your time and efforts. 'KZbin University' is amazing. I just asked myself where does yogurt culture come from? Chili peppers! Who knew? I make bread and wine from yeast. I make sure I have a supply of yeast at all times. I've been making yogurt by the gallon with the oven light for years. Yogurt culture is not a yeast so I asked myself where it came from. Thank you so much for this tutorial!

You only need to bring it to 180°F-185°F first then immediately cool to 110°F, otherwise it will be clumpy and lumpy because when you boil the milk you kill off the proteins that make it silky and smooth. If you want the yogurt to be like Greek style you can strain it through a cheesecloth after it has been in a warm not hot warm place like your shut off oven undisturbed covered with plastic wrap with a few fork pokes for air escape only 2 or 3 fork pokes leave for 5 to 8 hours and then enjoy remember the longer you leave it the more sour it will taste so if you prefer the mild tang of a subtle greek yogurt 5 to 8 hrs in a warm place undisturbed should do it!

Hi Adjeley, your making of yoghurt from scratch is very interesting and helpful. Instead of using full cream milk, can I use lactose free milk please? Thank you.

The bacteria produces latic acid which acts on the lactose and inturns causes the milk to coagulate..there wouldn't be anything for the lactic acid produced by the bacteria to act upon if the milk lacks lactose. So i doubt if you can use a lactose free milk..
