nothing beats homemade buns, people don't realize how much you can save by making your own on a Sunday, we had a bread fixing scandal here in Ontario, bread has gone from 69c to $3.00 over the years, I now make our own every week. You could watch a you tube video while waiting for the dough to rise !!!

I agree, one bun in the supermarket here was the same as the cost for the 6 of the ones I made. It is just about organising your time.

I lived in Toronto until '84 and have been back many times to visit family. I now live in Sydney (Australia, not NS!), and trust me when I say our bread is woeful compared to yours! It ranges from cheap white squiggy to stupidly expensive 'artisan' loaves and they all leave me amazed that, for a country with such good meat, fruit and veg, we have such rubbish bread. Forget pumpernickel, or rye with caraway - we can't even get basic bread right! (Ever been to Dimpflmeier's at Kipling and Dundas in Etobicoke? It is bakery HEAVEN!!) There. That's my little rant done, now back to this video and yet another book on bread baking that I've got from the library. Cheers and happy baking to you from Oz!!

What determines when one needs to use lard in a recipe and when one should use oil? I know that you always tell and show us which one to use, but I wanted to know if any rules of thumbs exist when choosing between using lard and/or oil. Thank you in advance.
@BakingOnABudget8 ай бұрын
I think the truth is either would do, but I have found that each give a slightly different texture to the pastry. with more lard the pastry is "shorter" and lighter and more crumbly, with half butter it turns out a little more firm. and the only recipe I've tried with the oil was the samosas. It comes down to a little experimentation. But the main rule of thumb is half the amount of fat to flour. I am learning all the time myself. Hope that helps.

@sarahbruce2655 I overnight bread dough regularly. Simply grease a bowl at least twice the size of the dough, and a piece of plastic wrap or bowl cover. Put dough in fridge immediately after first kneading. It will rise slowly. You can form it into a loaf and leave to rise next day. Hope this helps.

Hi, I've never used gluten free flour, but it should work out, let me know if you give it a try. Thanks.

Where did you prove it please ?

I put mine in the oven seat at the lowest temp about 25c. but this should not be attempted with a gas oven because of the naked flame and cloth over the bowl which could ignite. But in the electric oven it works out okay

Airing cupboard if you have one is perfect.

Or even in a room with sun coming in the window, make sure there's no breeze, makes room smell divine.

I use a hot water bottle to stand the bowl on, it works a treat.

Please can you upload a video to make a wholemeal loaf of bread on a budget every time I make it it is all doughy and stodgy after baking and never rises during the proving stage

yes you could leave them in longer and they would brown a little more, but I like them quite soft on top. Thanks.
