😂 I eat it plain too. Seems to stall me though so I can't have it right now. 😩 If you like it plain try cubing 2 ounces into Greek yogurt with strawberries, vanilla extract and powdered Sweetener. So yummy. It's like a faux strawberry cheesecake with little cream cheese nuggets. 😋

no, use two ingredients, milk, and sour cream with active cultures. put 1 tsp of sour cream into 8 ounces of milk and let it sit overnight at about 85F. Next day, put the sour cream in cheese cloth, and let it strain. There: two ingredient cream cheese.

Superfast Recipe! I'm gonna try it, if you want the good stuff back in it that's killed by the pressure cooker just put a little spoon of yogurt in it before the mixing and it will be allright after a night in the fridge.

Would be expensive compared to store bought though 🤔 Fairlife milk isn't cheap, plus a cup of heavy cream. Looks like it made an amount similar to maybe 1.5 to 2 blocks. Pricey!

I've been wondering when Joe was going to start making his own cheese. So it begins. What's next. Maybe ricotta from the whey. Or mozzarella I would suggest a simple Farm cheese. Also halloumi is supposed to be an easy cheese to make.

Happy, happy, joy, joy! I want cream cheese but I can't have all the lactose. I can make this with lactose free milk! The hwc will have some lactose but it will be significantly less than if I was using milk with lactose in it. Whooo hooo! I may try it with Tara gum and see what happens.

Wouldn't the curds before putting into the blender be the same as ricotta? And if you let it drain longer, would it be mozzarella? This is so easy! I've been making it out of yogurt but it has to strain for a few days to get really thick. This is fast!

Mozzarella goes through a cooking and stretching process (makes it stringy and melty) also rennet makes a better Mozzarella imo

I love your telling the world everyone can make cream cheese. ...But Kefir Cream Cheese is even easier to make, and loaded with Probiotics! Just Kefir Grains + Whole Milk. Put the kefir grains in a jar with milk. Leave it on the counter for a day. The next day strain out the grains, and enjoy your kefir. (Only 1% lactose remains.) Put a coffee filter into a mesh strainer, over a container. Fill it with the kefir. Refrigerate. The next day, the whey will be in the bottom container, and what's left in the filter/strainer is a really nice consistency of cream cheese! Let me know if you'd like more details.

A “way” to use your whey without worrying about the carbs is to use it as a hair rinse. I tried this after making my last batch of yogurt, & it made my hair the softest & fluffiest I think it’s ever been. Washed my hair, then used the whey letting it sit for about 5” then rinsed it out. No funny smell after final rinse out either.

Finally. A cream cheese video that doesn't make you use the yogurt setting and have you wait 9 hours. I was like, "I thought it's called an instant pot because of it being faster than the original process". I'm thinking about getting one to make yogurt, so it's good to know it works for this too. This video is so similar to my stove top recipe-- without the boiling over part. I also don't use whipping cream. I usually find my curds on the dryer side, and if they're too dry, I just add some whey back into the food processor. I start with a gallon of milk and end with 3 tbsp of salt added into the food processor. Maybe I just like my cream cheese softer, but I let it spin for a bit longer. And, of course, some of this might be different in an instant pot.

@@Nicole4262-f8m The yogurt cultures must ferment for at least 6 hours, usually 8-12 hours at about 110 F. That's why you need the Yogurt or Sous Vide setting for yogurt. Using the Pressure setting will be too hot and kill the cultures.

I cooked it on low pressure for 6 minutes, slow release for 15 minutes, the curds were a very light brown and it had started sticking and turning brown in the bottom of the pan. What did aI do wrong? I used fresh squeezed 🍋 lemons.

I'm wondering if this could be made using Rebel milk, which is made from cream and they replace the lactose with allulose. It has 3 total carbs and 1 net carb (the difference being the allulose). If I tried that, would you still recommend using the HWC?
