Worked at a cheese factory. We made cream cheese using generic frozen Spinach, while trying to be seen as an expensive product. You can add maple syrup and walnuts, smoked salmon, strawberries, garlic, and jalapeño too.

That is how we make paneer in India.After the milk curdle is rinsed in water to remove the acidity of the lemon/vinegar.Then transfered to a cheese cloth,wraped and left to set into a block and drain excess moisture.This Paneer is used to make sweet and savoury recipes. At times we add little cream and blend to make homemade cream cheese.

"Bûche" is the french word we use to call that form of cheeses also (it means "log", like a log of wood).

Everybody in the Balkans claims that yogurt Is invented in his/her own country :-). The word yogurt has a Turkic origin ofcourse. In Bulgaria, we call it sour milk (кисело мляко) :-). Greeting for the great video.

Well, as a Turk living in the Netherlands, I can say that the döner-kind of dishes aren't everything there is in the Turkish cuisine. Turkse pizza, kapsalon and döner are just the fastfood part of Turkish cuisine that's not even available in Turkey, its just a European (mostly German) thing.... Keep exploring Refika's channel if you want to learn more! She really puts effort and love in the Turkish kitchen and gives her own little twists to it! Je zult er geen spijt van krijgen!

@@susannes3135 I don't know if it's still a thing, but there used to be this tube cheese. It was encased in tough plastic, w/ a hard plastic cap that you could lift and squeeze the cheese out of. It was considered pretty low rent, so I don't think we'd want to call this beautiful, artisan looking homemade cheese, tube cheese.

@@Refika So I have just finish my first batch. I tried the basil and walnut version. It was really good, even tho I didn't have fresh basil (but still used high quality dehydrated basil). I used guerand salt flower to add a sort of "salty punch" (it's the best salt you can have in France). And that's it :) I will try next time an agrum version with some orange zest with maybe at the core of the büs a bit of honey (now that I think about it, it sounds really really good ^^' ). Lately been researching Turkish food because a store in the US asked my food company to start making items for them to sell in their store. Tried your cream cheese recipe and it worked like a charm. :) Although I did have to scale the recipe up to work with a gallon/128 oz of milk. (1 Gallon of milk produced about 2 1/2 cups of finished product.)

Make ricotta from the whey. Just heat and add an acid. Lots of recipes out there in KZbin. Use the whey in bread making. Add the cream soups. Never toss it out! ❤️ love the channel ❤️

In Indian, Persian, and Turkish languages (and probably in many others, as well) that looks like a common name for the same thing. You call paneer. Turks pronounce like "pay-neer" (written as peynir), and Persians much alike, as well. Don't know where it originates, though.

The water left after making the curdled milk is actually having all the whey isolates which is best protein. So everyone into body building should consume it. Bahar in North Indian mountains is Summer the best season in the cold mountains.

I first discovered how to make yogurt cheese by accident after leaving a container of homemade yogurt in the refrigerator, it got pushed to the back & forgotten. When I found it the lid had loosened & the liquid evaporated. I was curious enough to taste it & loved the flavor. I started making large batches of yogurt & draining the yogurt in a colander pan lined with a coffee filter, leaving it in the refrigerator for a day. I would eat it plain on toast or with honey & walnuts and found that green dill weed was also a good flavoring.

Chef John on Food Wishes has a yogurt cheese recipe as well. Only he drains it and wraps it in cheese clothe. I accidently made it from yogurt tonight too, only it wasn't either method. My batch of yogurt didn't quite turn out. I could see a bit of culturing, but it was really runny. I heard you could rework it, w/ more yogurt, so I turned it back on in the crock pot (my preferred method), on high for a 2 hours. When I went to go put it to sleep, I saw it looked just like the milk/lemon method and the curds and whey had separated, so I made that gorgeous basil/walnut version. It's setting now, but it was just the same as hers when I rolled it up. Just have to get the knack of rolling it neatly like she did. Mine is going to be more misshapen.

To prevent the basil from turning black, blanch it in boiled water with baking soda( I1 tablespoon in pot of water) briefly then cool the basil in cold water. It’s just a brief few seconds in the treated water but does the job.

I made the cream cheese with truffle oil. Came out very nice. I added 250gm cream to 2 liters of milk. And instead of olive oil I added a table spoon of butter. Very nice. Thank you for your inspiration.

Yesterday I made homemade butter after watching your video on how to make butter I used cream that had been in my fridge for long i.e. a month and was beginning to look like butter already I poured into mason jar and shook it for 30min Butter is niccceeee!!!!

Hi Refika, I am a big fan of your cooking. I tried this recipe today, added my own twist - garlic, dill, chives and paprika. Basically the stuff I had in the kitchen. This is so easy peasy, especially because I always make fresh cheese by curdling milk and having it on toast. But this was such an interesting twist and elevates the mood instantly.

Thank you so much for this recipe!! I made it yesterday using one half gallon of whole milk (US). I kept 1/3 plain. For the other 2/3 I crushed some roasted pepitas, finely chopped some kitchen-window basil (winter-time now) and mixed in cream cheese. I had both this morning on my jalapeno-cheddar artisan bread toast. Marvelous!! I have already shared the link to the video today. Also, thank you Bahar for all of the mint mentions throughout videos. My kitchen-window mint is in need of some TLC, looks like Charlie Brown Christmas Tree (worth googling for the reference :) Once rejuvenated I will try cream cheese recipe with the mint and crushed hazelnuts. Thank you again and LOVE the history stories and segments!!

In India we make cottage cheese. After straining the curdle milk, we drain the cheese in a cheese cloth and leave it under a heavy weight for sometime. Then cut into cubes and use it in cooking. To make deserts out of it- like the rasagulla the cheese from cow’s milk is kneaded with a little flour till it becomes spongy, rolled into balls and cooked in sugar syrup. I had researched a lot about yoghurt a few years ago. A typical South Indian meal is incomplete without Youghurt(curd). It is easy to make curd in warm climates. But I struggled through the process when I moved out of India. Thanks to the instant pot , now I have home made curd everyday. Definitely going to try the basil and walnut cheese. Thank you for the wonderful hummus recipe. I have made it a part of my daily diet. 💓

I am Turkish and I have never heard something like that. 🤔 I've done ratatouille couple times but I took the recipe from non-traditional sources. And none of them were saying that it's a Turkish dish as I can remember. We have very similar dishes to ratatouille but I dont think it DIRECTLY belongs to us
