I have always been taught that it’s not good using to much water with acrylics, that I should dilute with a medium. What is your opinion on that?

If you use a lot of water it will unbind the acrylic and it will dry splotchy, but for this style I didn't care if it did that so I intentionally used a lot of water. mediums come in handy in certain circumstances but they are not always needed, if you can find the sweet spot of how much water to use before it's too much it will do great. I personally don't use mediums, just water.

I think it would depend on the surface of the canvas, if it was primed or not. basically the water needs something to soak into and it wont soak into (as well) an acrylic covered canvas

If I'm working on a very absorbent surface (like fresh canvas in this case), and a thin layer of color, then I don't worry about underbinding. It basically get's absorbed by the canvas instead of sitting on the surface of the canvas :-)

No I didn't, the canvas came pre-primed and that works fine enough for me.
