Nummy! Did it the same way though used a little butter and olive oil... added salt, garlic, onion powder... very good. Though ours were very very thin. So they got over done. Lovely though... I learned something knew today about the crust. Also watched the chef's show on tv about him and his restaurant and life. He's made it a long way. Good job!!

momokokochuchuchu after so long cooking, you know when when it's too hot based on how hot the pan is, how long the foods been cooking, etc. It's still hot but you have a feel for when it's safe to touch or not.

Frying fish like this in a little butter AND oil mix (but only about a teaspoon in total) really adds to the flavour - (the oil stops the butter burning) - and not too hot, which gives you more control over the progress. Using a good non-stick pan is also essential. Just my experience and two-cents worth ☺

I made this again last night for my - salmon-hating - friend. Not only could he not get enough of it, he asked me what the "coating" was. He was astounded when I said: Salt (and I added pepper). I'm telling you....this salmon is not only perfect...but it's heaven and so quick. Thank you again! (Served with Ina Garten's garlic roasted potatoes as well as roasted tomatoes.)

The chef is using Kosher salt, which is a coarser salt you can see the grains when applied to the food item. You can also use a coarse sea salt. Chef Cesar

I always refer to this video when cooking salmon and it comes out perfect every time! ...except tonight. I didnt watch it before cooking. It wasnt bad, or overcooked, but it wasnt as great and after watching again I found my mistake. Thank you for this! I cant hear anything on my phone, but may have watched this once when i could. Still get the gist of the method and it works every time.

Thank you for posting this easy way to cook salmon. I'm not a great cook, so I need help. I especially like your video for the tips you gave in the video, such as the salt forming a crust, and butting up the 2 pieces together to cook the thicker part while not overcooking the thinner part. And most helpful, the hint about placing the fish away from you so as not to get splattered. I'll be preparing this tonight.

I literally tried this tonight myself for the first time ever (I'm a 22 year old that has moved out his parent's house and tried to do what my mum done). I used boiling water instead of oil and yes, I did get scared and moved my fish and 1 block tore in half and made a big square shaped stain on my pan lol tasty though

Check out "Gordon Ramsay's Plain Salmon Recipe" for some great tips on how to cook, flip etc. I prefer however to remove the skin to make it taste less fishy. Also try marinading it for about 1 hour in a ziplock in the fridge with: 2 T. olive oil, 1 T. melted butter, 3/4 tsp basil, 1/2 tsp salt, 3 T lemon juice, 1 tsp dried parsley, dash of dill weed. I dont add anything to my pan other than the marinaded fish because more liquids will make it less crispy and I love me some nicely browned crispy fish. ALso when it gets some crispy edges it holds together better for the roll/flip. Also take a peek at Ramsay's Steak video

This is the same technique. Only difference with leaving the skin on is to add a bit more crunch and will make the fish appear to have more of a brown color to it. Many times people leave the skin on to tell what kind of fish it is.

Salt should not be used overnight. It will draw out moisture and toughen.

Well thats just wrong, firstly it wont toughen the meat. Yes, the salt will draw out moisture via osmosis but it will be reabsorbed in the fridge, thus seasoning the inside. It is also concluded by experiments that it can help with keeping the meat juicy
