Michael - you get an "ATTABOY award " for sharing and using common sense for this squash cooking method!! This "Monson Method" for cooking is so easy and like a "DUH" moment of why no one has been doing this before (with so many videos of "guillotine" long cutting raw squash then cook it!). Just throw the intact squash in the oven (I forgot to poke holes but still was great), baked it for 45 minutes, let it cool 30 minutes... the spaghetti strings were AWESOME and SO EASY to dig out of the shell! They were perfect... al dente... not squishy and not hard chewy!! Great recipe and technique. I planted five vines of spaghetti squash from a store bought squash just on a whim 2020 late spring (just saved the seeds; Denver region). the squirrels decided to replant some of the seeds around the yard! We harvested over 20 squash! This squash is VERY prolific and easy to grow anywhere (likes sun). After years of struggling with cutting hard squash lengthwise (thought of using my Sawzall to cut them!) , cooking it sliced in half on a baking pan, and hoping that particular squash would turn out right - ended up quite messy and very inconsistent results in either too squishy and wet or unevenly cooked. So much easier to cut after cooking and in removing the nice "longer, al dente" strings of the spaghetti from the squash! BRAVO, my friend!

Thank you!!! I love the name you've assigned it! It's got a nice ring to it. I'm not sure why this method isn't more widely used. Most television cooks and KZbin cooks cut it first, the long way, and then bake it cut-side down. It infuriates me to see that. Why are you cutting the noodles in half!? And then why are you cooking it for a long time after you have the noodles and creating a gummy mess?! It's so frustrating! Haha.

It' has a very mild squash flavor. Slightly sweet, but it wont overpower any sauce that you put on it. I would say the flavor is most similar to a summer squash. Give it a try! It's such a cool ingredient to experiment with.

I've never had a problem with the noodles shredding. The key really is to cut in across the middle and not from end to end. That way they noodles are longer and stay in-tack. Thanks for watching!

The seeds come out easier before you cook the squash. I cut my squash down the center the way he does before I cook, take out the seeds and also roast them with butter and seasoning as a snack.

You're very welcome. Thanks for watching! I don't personally like to cook them cut. I find it easier to just throw the whole thing in the oven, and then cut it afterwards. But if you did want to cook them cut, then microwaving them does help to soften them a bit. Just make sure that when you cut it, you DON'T cut it from end to end, but instead cut it through the middle like I did in this video. It just makes the noodles much longer, and you won't be stuck with a bunch of broken noodle bits.

Haha. Yup. It's actually called "spaghetti squash". It might have a more technical name somewhere, or maybe other parts of the world call it something different, but in the States, it's pretty much just know as "spaghetti squash". Give it a go! If you follow my technique, you'll be pretty happy with the results.

Why not use a spoon to scoop out seeds, instead of fork dragging out spaghetti strands as much? The spoon also nicely scraps the rind when done.

That's awesome! You have to cook it in order for the noodles to be revealed. I like cooking it whole because they are really hard to cut. Most recipes you find will call for you to cut it first, and to cut it lengthwise, so that's why I made this video. I really think my methods of cooking and cutting yield the best results.

How long do you cook mini ones at 375? I dont want to overcook them because i'm baking them again in a ziti like casserole.

I would be more worried about under cooking them because that has an effect on the yield of noodles. I think an hour should be good. You could start checking for softness around 45 minutes... Every squash is different in size and shape, so you just need to to a light squeeze test to see if it's done. If it feels like it gives nicely to the touch, then you're good.

How do I store the spaghetti noodles for leftovers please? Like, will the texture change the next day if I wanted to pack leftovers for next day lunch? Or is this something that needs to be eaten the same day its cooked? (U know, like fries taste horrible the next day so it should consumed immediately after cooking)

I would remove all of the "noodles", and then let it cool completely. You can then store it in your fridge in an airtight container. The texture won't change at all. The squash isn't like a grain-based noodle where it will absorb liquids. They may release a bit of liquid, but you can just drain that off before using. I love to bake a whole one, take out all of the noodles, and then store them in a sealed bowl to use whenever I want. I've noticed that depending on particular spaghetti squash and it's size/cook time ratio, sometimes you don't even have that non-noodle part. However, if you do, you can just use it like you would butternut squash. You can puree it into a sauce, or cut it up into pieces to toss in with your pasta. Did you see the other videos that utilize the spaghetti squash?
