About the way I cook steaks on my PK. I'm a bit slow, so a couple of thing aren't clear to me. (1) Do you season on one side and the edges? (2) Lid open or closed when searing?

Most of the rubs I try with MSG are really good. Chupacabra brisket magic comes to mind. I can use it on every beef cut and it brings something to it.
