In this video, Dan shows us how to “pick over”, in other words, picking just the apples that are ripe. The tree is Red Falstaff, and the fruit shows great variation in colour, from the bright red of the apples that are ready, to the less-coloured fruit that needs more time on the tree. This difference in ripening time is caused mainly by the fact that fruit buds on one-year-old wood always flower later than those on older wood. The fruit that is only partially coloured is on the one-year-old wood and so needs at least another ten days on the tree in order to colour up. Another factor involved in ripening and fruit colour is exposure to the sun. Dan shows us the difference between the east side and west sides of the tree, on a row that is planted north-south. The colour is much better on the west side. If the trees are in a row, it is always best to choose a north-south row orientation, and to ensure that the trees are shaped in such a way as to maximize exposure to sunlight. When picking, the fruit that is ready comes off very easily just by lifting the apple. Picking is much easier if you have a professional picking bucket that enables the fruit to be slid into a box without bruising. Demonstration and narration by Dan Neuteboom, camera by John Paddy.
