Thanks for posting this. Pickled 30 jars of this last year with minor variations. My wife eats about a jar a week and has put in her order for 52 jars this year. My wife puts it on almost every dish.

I hope you know that you just completely made my day. This comment truly blessed my heart. I'm so glad that you and your wife enjoyed them. This year's canning season may even hold some more different types of pickled pepper recipe videos for us. Pickling peppers has almost like become an addiction with me trying to come up with new flavors.

@@artofcreationhomestead about the only thing I really did different was to add a bit of red bell pepper to give it a bit of color. I varied the amount of garlic between batches to see how much was too much. Three cloves is too much!!! We also canned a bunch of bread and butter pickles which turned out to be excellent. Really popular with the grandkids.

Thank you. I will forever be grateful of my grandparents teaching me how to do some of the things they did growing up in the Appalachian mountains in West Virginia. They did it to survive, I do it for the joy and memories of doing it with them. My grandparents did not waste anything. If it could be put in a jar and canned for winter, it got canned. @backwoodsbaby9729
@backwoodsbaby9729 3 жыл бұрын
@@eliseandanna7023 oh please do way more research before canning then! (Research aka read the most recent recommendations) So the thing about storing with rings on is that the rings can hold a bad seal down long enough that it reseals. But you dont know that & eat it & get sick! The problem that i see most discussed is botulism which doesnt "look" bad but it can kill quickly. I think its probably pretty rare for it to actually form botulism, but i wouldn't want to risk that. (I tend to believe most people when they say ive done it for years xyz way & never gotten sick. But i think they have just been really lucky, especially as the decades stack up lol) Oh and a bad seal is caused many different ways. :) Dont let this scare you from canning! Its really fun & easy once you get the basic fundamentals down!
@artofcreationhomestead
@artofcreationhomestead 3 жыл бұрын
@@eliseandanna7023 because the ring holds the lid down tight. If the lid comes unsealed the ring can make the lid re-seal which will cause bacteria to grow. A true air tight seal doesn't need the ring.

If what I'm canning doesn't need to be cooked in the jar all I do is clean everything real good. I put the jars in the oven at about 200 deg. I keep a pot boiling with rings and lids in it. I pack the jars, fill them with brine, clean the lip. Hand tight and sit them on the counter with a towel over them. As they cool you'll hear the lids pop down. I haven't had a false seal yet. Been doing it this way for 10 years. Spicy banana peppers are GREAT on pepperoni pizza. You gotta try. The trick is to get the pizza parlor to sprinkle some cheese over the peppers so they don't just fall off when you eat it. Take care.

🤔, since watched grandparents hey would pick all types of peppers and some other veggies from farm, would make a more acidic brine, pack raw peppers or veggies in jars, add hot vinegar and 1tsp or 1tbsp salt depending on jars, boil lids too, then add lids and let cool off on counter, once warm flip jars and wait for seal, tighten up lids. Is there a difference? Always wondered about preserving, pickling, canning... Have peppers over 2yrs old, keep rotating new.. be nice to see a video that explains differences. Tyvm

Like your recipe for the peppers. I will try the tumeric. I started using some pickle crisp in mine to make them maintain crispness. Getting the hot part just right has been a little difficult. The seeds gone and use of sugar help a lot to reduce the heat. Even researching the Scoville score on different peppers was slighttly helpful. I plan to use some that have no heat and blend in half or less of the hot banana peppers to get the heat range I'm looking for. The pickled peppers with horseradish mustard on sandwiches is good and love them on pizza. Thanks for the video.

With the Ball Electric Waterbath Canner, the plate goes on top. It will not fit in the bottom. There is a rack that the jar sits on in the bottom of the canner. I know the jars do not float. I do not think they do. The plate isn't there to keep them from floating. The plate is there to keep them from hitting together as the water boils around them because the water boils very hard in this canner.

@westbobby2011 I also looked at my manual, and it not only said it goes on top but also shows a diagram of it being placed on top. It will not fit in the bottom because of the release plug and the way the sides of the pot are indented.

No. Not at all. It probably seems that way with all the Ball stuff I'm using. 😂😂😂 it's actually my own recipe. I guess I just really like Ball products.

Great video! Curious as to how these are to be stored though? Should they be kept in the refrigerator for the month or in a cool dark place? Thank you :)

If you choose to skip the step of water bath processing then they will have to immediately be put in the refrigerator after you put the brine over the peppers and close the lid. If you choose to do the water bath processing then they are completely shelf-stable and can be kept in a cool dark place just like any other home canned good.

Thank you for the video. The brine was great. Just curious how your peppers come out. I can’t seem to keep mine from getting too soft. Is it possible to keep them somewhat hard? I don’t want do any additives.

I will not use additives in mine. It all depends on the thickness of the walls of the peppers if they will stay crunchy in the water bath process. You can skip the water bath and put them straight into the refrigerator and they will be pickled and ready to eat in about 3 days and they will be very crunchy but they will not last as long because they have to remain refrigerated.

The vinegar has been sloshing against those lids throughout the boiling process. The thing that prevents those false seals, is making sure that the lids are tighten finger tight and not left loose. However, over tightening the lids could cause the jars to explode. The right tightness, keeps the possibility of a gap forming and letting debris get in the seal area.

Would they still be good if I don’t add the garlic ?

They would be. As long as you don’t change the vinegar to water ratio by increasing the water part you can add different spices.

Question...Would you recommend putting the banana peppers in with the brine till it boils and then put them in the jars so you can get more and then pour the brine in the jars?
@artofcreationhomestead
@artofcreationhomestead 2 жыл бұрын
If you put them into the brine then they will start to cook and get really mushy by the time they cook a little there and then go through the water bath process. I hope this helps.

I make that mississipi pork, chicken, etc.. and I use jar pepperonicini. We don't like it hot but mild is hard to find. If I use sweet banana peppers and do as you said, will this be mild pepperoncini?? I'm actually growing German and Italian pepperonicini to see differences.

So glad to have found your channel! I only have 2 banana pepper plants 🪴, some of mine r turning orange & red. Can I use the banana peppers in different stages of ripeness/ color?

Thank you so much for watching and welcome to our channel. Yes you can use the peppers at any stage of ripeness. If you only have a couple of plants and you don't have enough peppers at one time to go through the whole water bath process and everything then you can just pour the brine over the peppers in the jars and put the lids on and store them in the refrigerator. They are super crunchy and delicious that way and you can start enjoying them in 3 days. We have another video about doing them that way too.

I tried your recipe. The flavor was great. Unfortunately all of the peppers are mushy. Now I used Hungarian wax peppers. Are they too thin of a pepper?

i really like the idea of adding tumeric...I already add that to my mustard pickles and my bread & butter pickles might try that with this too. Thanks!
