How to portion a chicken. First in to 10 pieces then in to 22.
This is a great way to portion a chicken, keeping it on the bone. Ideal for curries, casseroles or the BBQ. Cutting it on the bone gives your chosen dish more flavour and keep the chicken moist.

There's a real psychology to slicing things up. Eight pieces isn't enough to go around in a family of five; but Twenty-Two is Abundance! Eyes get as big as saucers when they see such a huge platter put on the table. I've followed you for long enough to see your video on cutting ten piece chicken. I remember the look in the eyes of my daughter, who had always insisted that she only wanted one piece, but when TEN pieces came out and she knew she could have Two pieces ... it was a brief moment ... a fleeting look on her face, when she realized she could have Two pieces. I felt like I had treated my own child like Oliver Twist. I hadn't realized that children are capable of self-sacrifice for the family. I'm really very grateful to you. Thanks. I'll never go back to eight piece chicken.

This is how my mom would order the butcher when my parents sometimes have to make ends meet. I honestly felt horrible if i snatched two pieces 😅

​@@vuvuvu6291 Thank you for that. When going through these things (hard times, raising children on a shoestring budget); you feel clever to have thought of solutions that work. You also feel sad because you're not able to provide for your family the way you believed you should and the way you expected you would. Psychologists tell us that it is 'shared suffering' that build the strongest possible bonds between people. Explains why soldiers 'miss' the comraderie. Also why children who see their parents struggle (successfully), feel such deep love and gratitude - it's more than just because they're your parents. It's hard to explain but that's basically sound. Reality is like that.

When my kids were little, I always bought a whole chicken and cut it into the traditional eight pieces. I had one piece, usually a breast, and my ex had one. That left the remaining six pieces for our three children. They alternated who got the drumstick or the wings each time we had chicken. I learned early as the daughter of a carpenter what is was to have very little. And I learned from my wonderful mother both how to make a little bit of food go a long way, and how to convince your children that you really weren't that hungry and couldn't possibly eat as much as they had on their plates. Just as my own mother did, I would go with nothing before I'd let my children go hungry.

Cutting up a whole chicken has always been intimidating so I'd usually buy chicken thighs or drumsticks, yet today after watching this video demonstration I followed the steps and it was so easy. Making delicious curry now. Thank you very much for the lesson :)

This is an excellent video. It shows how to stretch a single chicken to feed 8 to 10 people. A dish like arroz con pollo (chicken and rice) benefits from smaller pieces.

Perfect. The smaller pieces make it easier to fry the chicken in less time while keeping it juicy. Had always want to do this and didn't think of just pushing down hard to cut through the bone. I thought I have to use much more force. Thx

Hi Scott, noticed you cut the end of the drum stick/the knee/ankle off - wouldn't that potentially cause problems if the bone splinters and lets out a few sharp chunks in the curry? I've always deboned the drumsticks entirely for that reason...

Hello Scott, thank you so much for this video, we cook a lot of Indian curry and prefer meat to be on the bone so this video is perfect for us. I also like to use lamb shoulder for a long slow cooked curry but am not very good at dividing it up without making a mess of it. Any chance of a video on dividing up a lamb shoulder in to curry cuts please, i like to use very large pieces so they do not break down too much in the long cooking process, thank you so much. Peace.

Living in very Urban Newark, NJ USA, I have access to grocery store with a very serious Hispanic (Central and south American) influence. I can get chicken leg quarters, that I can separate into leg and thigh if I want or skinless boneless chicken breasts (with lots of fat attached) for about 79 cents to 1.98 per pound. Our very divers immigrant community gives me access to live poultry. In a few weeks, I will by buying a Duck. This video will help me a lot as I will get it whole (head, feet and hopefully a huge amount of duck fat) included. Most of the rest will go to broth. I'm still using the Victorinox boning and fillet knives you suggested to all of your viewers three years ago. Thanks again for that.

I have killed a live chicken and cleaned it up--feathers and guts all removed, but I have never butchered one into tiny pieces as I was too small to handle a cleaver ( I was 9 y/o then; I'm 51 now). This video is very helpful. I don't understand the thumbs-down. If I can give this 2 thumbs-up, I will.

@@tarinyeba6814 usually offcuts (ie. the end of the chicken wing, or the ribcage) would be saved and made it chicken broth for soup. my family grows lots of our meat and produce so we try not to waste anything.

Scott, have you done any research on the way the Chinese chop up animals? Seeing as they eat with chopsticks- and, also, the Indians eating with their fingers- preparation of meat for cooking is totally different to the way it gets done in the west. Wonder if there are any ancient Chinese butchery texts? And then you've got the Chinese chopping and cutting just about everything with razor-sharp hatchets.

Nice video. Probably the best way for the recipes you have selected. I'm a little disappointed that you removed the wing and drumstick tips. They are my favourites because they crisp up so well in a roast. Do you have any demonstrations regarding less popular bits like necks, livers and other bits of offal?

I always find your videos so helpful, especially this one. I've been practicing neatly separating a whole chicken. I tried watching Gordon Ramsay videos for reference, but he's so fast and jittery, it's hard to follow. I appreciate you taking your time and really giving a good demonstration

Doug Yankunas Do you have any recipes and butcher videos on the common snapping turtle ? The have many types of meet on one carcass. I would love to see a video about how many different types of meals can be made.
