Depending on what you're cooking, adding ginger to a coconut dish helps in cutting through the heaviness of coconut milk & cream. You need that something to lift that flavour profile of coconut but you have to add just enough so that it doesn't become over powering. Ginger really is a nice compliment to coconut and aunty really shows that in her knowkedge in these videos. Keeping putting out videos Ms Debbie. Really love them! 😊✌

Your are the best teacher. My challenge for Saturday is cooking this for 60 people. I will use four pots. I could not get anybody to do it. Even if I have to cook it in one pot twice, I will do that in smaller portions. Your explanation was in detail. What happens if you put a little piece of pumpkin? We put it in our rice and peas. I hope I’m not the only one who was looking through the cabinets looking for red peas all the while thinking she’s using red/kidney “beans”. Man, I hope I’m not confusing the names of the same thing. Y’all don’t laugh at me. I’m gonna try this ‘cause I shonuf want to make this. Ms. Debbie I want to take a trip to Jamaica and taste your cooking! Do you cook for tourists/visitors or just your family? How do you prevent the rice from sticking to the bottom of the Dutch pot? Can I muse some oil when cooking the peas? Lastly, if you wake up in the morning and have a feel for rice and peas but didn’t soak your peas overnight, how many hours should I soak them? I learned something new I always add salt after the pea is cooked. I heard somewhere that the salt make the peas tough. I guess that’s not true. I’ll try it this way next time

Very nice. For my rice and peas, I put everything in at once to flavour the kidney beans, then I add the washed rice about an hour later when the beans are cooked.
