Beef fajitas, delicious doesn’t do this 1 justice. We threw the marinade together 24 hrs prior to adding the meat so all those flavours could combine. After 24 hrs trim your beef skirt steak to your liking and marinade for 6-8 hours. For best results cook the skirt steak over fire, cook till approx 135f for a medium rare finish and rest. Whilst your meat is resting prepare your fajitas.
Garlic pickling mix ingredients:
1.5 cups water
1/2 cup apple cider vinegar
1/2 cup white vinegar
1 tbs salt
1 tsp white sugar
2 tsp minced garlic
Marinade ingredients:
1 cup soy sauce
2 freshly squeezed lemons
1/2 homemade garlic pickle juice
1/4 cup red wine vinegar
1/4 cup chopped shallots
2 chopped jalapeños
2 tps minced garlic
1 tsp kosher salt
2 tsp black pepper
Fajitas ingredients:
Tortilla
Mixed capsicums/bell peppers with red onion, we added some all purpose seasoning
Beef skirt steak
Salsa
Lime
Avocado
Coriander
