This is the best Escovitch fish recipe on KZbin handsdown. I have made it several times and I never get enough of it. I'm Jamaican but grew up in the States. This is the one dish I never learned how to make. Now my family is like who taught you. I'm like "Auntie" Debbie! 😂😂😂

I'm African and this is my favourite Jamaican dish of all time. I'm a long time patron to my local Jamaican restaurant in London. The moment I step in they all know what I want. I don't even have to speak. I've also had it with sprats. So delicious. My question is how do you stop it from attracting bacteria in such a hot Jamaican hit if you gonna wrap it like that for 12 hours? Should you keep it in the fridge if you live in a hot climate?
