As requested here is how to prepare some Ghana Tolo beef, which is excellent for soups and stews. Its simple and you don't need refrigeration. Some fancy steakhouses like to call this method "dry-aged".
Ingredients:
Ribeye steak
Sea Salt
Mortons Salt
Cloves
Alligator Pepper
Bay Leaves

Here in the caribbean we dont buy bayleaves in bottle we actually pick small branches of the leaves and hang the in the kitchen to dry naturally and they have intense flavor but the US and other places everything in bottle or plastic. Nice technique i will try. Hello from Trinidad and Tobago.

For the red colour,you can use powdered paprika. I think its close and a healthy alternative

Stella you can also use anatto berries which can be purchased at any Latino market. It has to be crushed though.

It's great depending on your location. I live in St.Petersburg and it's about 20-25 minutes from an African store.

Hwentia is actually Selim pepper not Alligator pepper. Love your Tolo beef recipe.
