Excellent recipe !! Those criticising are know nothing's. The nice thick soft inside and crisp outside dosas of Karnataka hotels are extremely difficult to replicate. Though we are native South Indian and have been making since we were kids. Have tried dozens of recipes to achieve the amazing Udpi hotel style dosas but never acheived it. This receipe seems promising. The best outcome I have seen so far in my 10 year search.

Thank you so much. I followed the recipe in exact method and my Dosas turned out to be the best in the whole world. They were better than any South Indian restaurant. Thank you. People with vile comments should try to follow recipe first and not to go by the look of Dosa you have made. Different people different choices of Dosas. Some like thick ,some thin. And in authentic South Indian restaurant, they don't serve thin, they are always medium thick. Crispy yet soft.

Reshma Begum glad atleast one person has appreciated her effort. It's not just Indians watching this video. It will go international. They will be aware of certain ways that Indians still prepare the batter. In my childhood days, we used this method of grinding but not anymore. As you said time is not enough as everyone's working. But just imagine, this method preserves the taste and she made it with whatever she has.

I think it's amazing that you're trying to share these healthy Grass Roots recipes with us. Most ungrateful cretins on here expected a recipe that was adulterated beyond recognition with all kinds of preservatives and processed junk which is what hotels use. Baking soda and sugar is absolutely not needed... after fermenting dosas will automatically become puffed and crispy But thank you for the ingredients and method of preparation

Sugar and baking soda are often added in hotels to increase last minute fermentation and sugar also give the even golden color and also prevents the white holes from being formed. It's common in restaurants.

But why do you use non stick pan if everything else is village type? If you are more health conscious and prefer organic home made then you should have used iron kadai or iron pan.

In case you missed the title. The recipe is for a hotel style dosa. So the jokes on you. One of the reason to put sugar in batter while fermentation is to get the fermentation started quickly. Sugar is the food required by yeast Which ferment the dosa Batter. The yeast digest the sugars in the rice for the fermentation an initial high number due to added sugar starts the process fast. The sugar at end is to give color and if kept for 20 minutes or so along with baking soda give secondary rise just before putting on tava. This is essential for fluffiness and for the color. She knows what she is doing. The pepper and zeera are unsual may be they are the reason for the completely unachievable taste that hotel dosas have. I'm going to try it.

You don't know much about dosas. In most of Karnataka dosas are made this thick and crisp. They are the best dosas . Watch you tube videos of Bangalore, davangere Udpi dosas. Or better still search for CTR dosa or Vidhyarthi Bhavan. This is an important receipe. As most hotel people don't tell their recipe. I have been eating and making dosas for decades this is the closest one that comes in texture and color to Udpi style thick crisp on top and soft inside dosas. I have to try the taste.

You know nothing about dosas. Karnataka where restaurant style dosas were invented this is how it's made and they are the best dosas in India. Other states copied the restaurant style from Karnataka.
