Hard work but fond memories shelling beans and peas in the living room while watching movies. We’d have sheets all over the house with pea and bean pods laid out on them. 😂

We call them cranberry beans down here as far as I’ve ever heard them called. I love “October beans” though. 🙏🏼❤️

I am a new subscriber and really enjoy your videos. We have been farming for a long time and a messy kitchen is just part of the farm life , but ain’t it good ! Wouldn’t trade it for anything. We live in North Alabama on Sand Mountain not far from Fort Payne,Alabama and I feel like I’m knee deep in tomatoes right now . God Bless y’all.

I have a new driveway and I planted the purple shell out beans. I just harvested them and ready to start canning them today. Normally I have done quarts but today I am going to do pints. Thanks for the video. ❤. I ordered your cookbook and I look forward to Amazon delivering it to me tomorrow.

We tried the October beans from a farm stand this year and loved them. I cooked them with a sprig of fresh sage and the flavor was awesome. Planted some and hoping for at least a nice picking before frost.

I really appreciated this video ( and I love your accent😄) I just tried your method with my fresh shelled Jacob's Cattle beans -- I'm so glad I saw this first! I put a little bit over half in the jar as you said and boy am I glad I didn't put more ( like others said) those beans would have busted out of the jar I think! They about doubled in size and are sort of smooshed together😂. So I'm only going for 1/2 a jar next time! Thanks!

On the “plastic lids” assuming there the tattlers. I have same issue but! I only after trial and error use them for pickling and my jelly and jams and so far the water bath product seems to yield a higher success rate. Awesome information from both of you!! Keep up the good work.

I ordered your book and it got delivered today! What a sweet book, I’m glad you mentioned it on one of your previous videos or I never would have known. I’m so happy to add it to my collection and looking forward to trying the recipes 😊 I haven’t grown fresh beans yet but I’m trying to work up the courage to pressure can, I loved your video when you boiled up all those chickens and pressure canned meat from them. I have a pressure canner and I’m really really close to taking it out of the box 😅

Haven't ever heard them called "October beans", Borlotti, cranberry, soldier beans. Scientific name - Phaseolus vulgaris

When I lived in Statesville NC I was able to find these at our farmers market they’d of the season every year. We called them Cowboy beans. This the most spectacular bean ever!

Thanks, i was just looking at my october beans and wondering if they were ready. I haven't grown them in so long that I had forgot what to do but they are colored like yours and the vines are getting a little yellow. I have tattler and harvest guard and ordered forjars which work real good, I use the plastic lids when I have to, I have found not to tighten the rings down when done until they pretty much stop bubbling and they seal better. Thanks for the video, you answered all my questions!

With dry beans, I usually soak them over night and pressure can pints for 75 minutes, so just a little more of a process but totally doable! Love y’all’s content, have learned so much and look forward to seeing y’all again at the homesteaders conference this year!

We got these from hoss tools, I think “October beans” may be just something folks call them around here, haha! This is the first year I ever planted greasy beans.... okay, I am totally confused about bean types. I ate them green with the shells on and they were delicious! But they got away from me midseason and I read you could eat the seeds fresh even if the pods were tough. So I picked them and shelled them and some were fresh and moist and others seemed to be pretty dry (I think I left them on the vine too long). I see that yours are really fresh, but should I separate the fresher ones from the more dry ones? Can I use them the same way and do I have to soak the dry ones before cooking? I am so confused and I don't have anyone to ask up here about it. Are there some greasy type beans that you can't eat shelled or are not as good as shelled beans? I don't know, any help would be appreciated in trying to clear up my bean confusion :)

So I have heard that you can eat the bean alone from greasy beans, but I've never personally tried it. We usually eat those as you would any green bean. The ones in the video are actually meant to be shelled and eaten as beans. I usually try to pick all mine at about the same ripeness (I guess this is the word i should use here, ha!). If they are pretty dry, if you shake the bean and it sounds like a rattle then I store those dried. I hope this has helped you! Good luck and thanks for watching!

How do you know you have 10 pounds of pressure?

My pressure canner is a weighted gauge instead of a dial gauge, so when the 10lb weight on the lid begins to rock, that means you have reached 10lbs of pressure. Hope this helps!

What are your thoughts of reusing the metal lids? I know its not a preferred method but we save ours just incase we ever find ourselves in a pinch. I read somewhere that if you'll boil them for 20 minutes the seal will flatten back out to an extent. What is your thoughts? Thanks for the videos keep em coming. Also way to go on teaching them kids good work ethics.

We call those beans shelly beans. They are better than pinto beans.
