I did this, too! This did benefit us! I have even done this in different size jars so we could have small jars to make chicken salad, or larger to make pasta or other dishes! You are a wealth of knowledge! God bless you!

I remember my mother canning chicken in the forties. She canned tons of fruit as well as jams and jellies. One sad year my brother and the neighbor neighbor boy were striking matches in the garage and accidentally set a fire going and her whole wall of canned food on shelves got damaged. I knew that was a sad happening. My brother learned a huge lesson but imagine my mother’s sadness after doing all that work. fortunately the house did not burn down nor was anyone injured. When I was bigger I remember helping her cut apricots and peaches in half. She canned everything. You are encouraging me to maybe do this canning business. Just started watching you but so happy.

Great job , Granny ! 💙 I've never seen a pressure cooker used with canning . My Grandma would use a huge gray pot .. Boil her jars and lids and fill them with whatever she was canning . She used thongs to Place the lids/rings on Then she'd close them to her liking But before they go on the shelf She'd have her son ( my uncle ) Tighten the lids Some more . She did potatoes , peas carrots and onions ( for beef stews) And she'd do Corn, okra , tomatoes ( soup base for chicken soup ) She also did just Corn and tomatoes Which you could add to chilli or whatever you'd like . Again .. Some homemade corn bread is amazing with everything I mentioned Here ! 💙

Great question.... I used the USDA Guide to canning for this recipe.. They do not specify . They usually recommend 1 year but I have seen people use after 3 yrs. with no issues.I intend to rotate mine and will use up within a year

I'm new to your channel and am really enjoying it. I have canned jams and apple butter in the past but have been considering canning meats. It looka relatively easy. But I know you must be extremely careful when processing food of any kind and when using a pressure cooker. I'm curious about how long after the 75 minute cook time did it take for the pressure to reduce. Or do you do something to release it?

Thank you so much! I am just starting and have always been intimidated by canning. But, like you said we are in different times and it calls for different measures now. I watched another lady who has been canning all her life (she's in her late 50's now) and you did almost exactly like her to the letter.
