@@KnettersPracticalOutdoors yes i have been cutting deer since the early 80s. but now of days i only do a few each year for me and a couple of friends. i like making my own smoked ring bologna and some Italian style fresh deer sausage. i also make dry cured sausage for the holidays (sopressata)

I have worked at three butcher shops i started at 16 im 66 now, but it wasn't my career, i am not a professional, i enjoy watching a pro at work, he is one of the best I've seen, i do enjoy watching meat cutting with anything, also any knife cutting talents people have whether meat fruit veggies, also the practice of a sharp knife, of course all the outdoor stuff, Great video, i would like to hunt in mio,lewiston area on my property but im stuck here in northwest oh hunting where there is a lot of pressure on the deer to many hunters not enough woods, take care go Mich

Hey Dave, you drive me crazy whenever you bring out the Wenzel's sticks...just phenomenal sticks. I wanted to add a helpful pointer for everyone about removing the sinew. If you are freezing it long term, it might be better to leave it on until you thaw and cook it. That sinew adds another layer of protection from freezer burn and it gets removed anyway. I got that from Steven Rinella

In Florida most guys take back straps, tenderloins, hind hams and throw the rest out for the coyotes. This is time consuming but very informative.

Looks like you're wearing cotton gloves. Is that for better grip? Do you wear rubber gloves under them? Can the cotton gloves be laundered?

Yes, sometimes when it's really cold and yes they can be cleaned. They work great for a little added warmth and better grip as is.

Yes, I think you mean the steel? I don't know the exact grit of the one, but the one he uses the most is totally smooth.

For a newbie, what knives do you recommend for butchering a deer?

We use some Victorinox knives. They are very good quality. Here is a link to a perfect quality basic boning knife - amzn.to/3W05sWk But we also use some pretty inexpensive knives too. Although, I will say it seems like you have to sharpen the cheaper ones more often. But when they are sharp they cut good. Thank you! I use a few different cameras. The main one is a Sony Handycam. Which isn't really a high end camera, but works good for what I do. The overhead stuff was from a Akaso 8 lite action camera. I think they are both around $200.
