@@antheminstrumentalchannel9858 /e/ and /ɛ/ are simply two different ways of referring to the same phoneme, the vowel of DRESS. You should not confuse /e/ with [e], and dictionaries are often very conservative in their way of transcribing phonemes, hence /e/ instead of /ɛ/.
