Thank you very much for the "Detailed" video. I have been tryiing to produce clear maple syrup for about 8 winters now. I have either had niter or a cloudy subtance at the bottom of my bottle. Today I used your "very important step", which finally put my syrup over the top. Letting the syrup cool to 190 degrees.

I strain my sap as I add to the evaporator. Then @ 113-115° F I filter with a non- woven liner and thick reusable felted synthetic filter. The WORST part is final filter @ 119° when sadly some of the syrup gets absorbed by the thick felt layer …😢 There’s GOT to be a better way to not lose all that syrup in the filter!

Soaking the final filter in very hot water, and not wringing it out helps a lot. It adds a little water to the final product, but the hot sap goes through much quicker. Anyway, keep it up, sounds like you got a good operation going there!

I save a cup of filtered and concentrated sap for soaking the filters so I'm not adding any actual plain water, only sap from the trees.

quite a process I would think for someone only making a couple of gallons a season better off boil to 220 put into warmed gallon glass jar let settlings fall to bottom for about a week the use it or open pour off till settlings start leaving settlings in jug then heat to 218 and hot pack in jars lot less work less expense less time boiling

Hi- great explanation and video. But I must ask- in the final filtering you say to put 3 non- woven filters inside the Synthetic Orlon filter yet I only see 2 in the actual filtering in the video- and the part showing the setup on the cereal boxes seems to have a stack of non- woven , then Synthetic, then 2 non- woven- and the filtering video into the pot shows the synthetic with TWO non-woven filters only. Am I mistaken? Please clarify. Thanks

Hi! Yes, in the video I was trying some things to arrive at my eventual optimal settings. The verbal instructions are what I recommend. For the final filtering, I like to put 3 non-wovens inside the synthetic filter, then, as the top non-woven gets clogged, I'll remove it (so there are only 2, like in the video) then keep pouring through. As the 2nd non-woven filter gets clogged, I'll remove that one and keep pouring. This just allows you to pour more syrup through the filters at a time. I don't recommend pouring directly into the synthetic filter, just to prolong it's lifespan! Good luck, hope this helps! Happy sugaring!

I'm new at this but one thing I noticed is that the more I filter the less quantity I end up with.... So I'm battling quantity against quality.

Hmm. Yes, you do lose some product every time you filter. A couple of thoughts: 1. Filtering several times earlier in the process (while the syrup is still relatively thin and watery). 2. Filtering at higher temperature when the syrup is runnier. 3. If you're not already, be sure to dampen your fine filter with hot water prior to filtering makes a big difference. Thanks for the info! One more question as we just started making syrup ... how do you clean the filter? I think I wrung the one we have too much and it is not filtering all the finer bits anymore and my syrup is coming out slightly cloudy now. Thanks for any help!

Hi! Good question! The synthetic filter fibers are somewhat fragile and prone to damage. Yours may have been damaged in the wringing out process, as you alluded to. To clean them, I just use clean hot water to rinse out completely, pat dry, then allow it to air dry (takes a long time!). Once it's completely dry, then store it in a Ziploc bag. Some people use a mild detergent as well. They can be used multiple times, but eventually will need to be replaced. Hope it helps! Happy sugaring!

Thank you for the video! I tried your method but wow filtering time took forever! The syrup just sits in the layers of filters after it cools off. Any advice on how you can speed that up?

Two things: heat and moisture. Make sure the syrup is still nice and hot (as close to 190 deg as possible). And moisten the synthetic filter with very hot water, then blot it dry (so it's not dripping), but still moist. You can moisten the pre filters too. Good luck!
