Hello everyone, I'm from the Caribbean and we do a lot of pickling. A little tip I got from another pickler is to turn the filled jar over on to its cover in the refrigerator for half of the process and then back over on to its base. This helps for all the veggies to get soaked in the brine if you didn't pack the jar. Thank you Mary, love your videos💙🌟

I love this video ‼️ If you don't want a cloudy brine use pickling/canning salt. It doesn't have any anti clumping ingredients which is the reason for cloudy brine. I don't recommend dollar store salt. LOVE FROM VANCOUVER BC CANADA ‼️

Thank you for this inspiring video. I am always looking for new ways to sneak more vegetables into my family's diet. Recently I tried a sprout sandwich, but my husband was not impressed. I love your idea of these pickles used on a sandwich. It sounds so tasty and appetizing. My mouth is watering, just thinking about it. I seen pickled mixed vegetables in the supermarket for several dollars a jar. I gotta try this at home!

Tossing the chopped parts in a bowl and evenly mixing them prior to packing jar(s) ensures that one can scoop out a tablespoon or two and still get the full variety of the veggies used without having to "dig" in the jar with a fork for parts.

This really isn't about the pickled scraps but wasn't sure if I attached to an older video if you would see it. Question: Can you do an Extract update... I did extracts back in Jan. Would like to see how yours look after sitting before you give the a shake. Mostly the coconut which is starting to look a little thick and the Almond which separates into a clear liquid and then some sediment.

Oh Mary. This looks wonderful, I have some veggies that I need to use up. I don't have pickling spice, that would definitely be better, but I'm going to do this in the next few days. Would broccoli be good? I've never had a pickled broccoli before, maybe that wouldn't be good, I don't know. I found an Asian inspired refrigerator pickle recipe that is a bit spicy and unique. It uses cucumbers and carrots.

Asian Ginger Pickle 2tsp. Dry Korean Red Pepper Gochugaru 2tsp. Minced Garlic 1tsp. Ground Ginger 1tsp. Minced Onion 1 1/2 lbs. Pickling Cucumbers 1/2 lb. Peeled Carrots 2 cups Water 1 1/2 cups White Vinegar 1 cup Rice Vinegar 1/2 cup Sugar 2Tbsp. Salt Cut ends off cucumbers. Cut Cucumbers and Carrots into 1/4 inch slices. Set aside in large glass bowl. Mix water, vinegar, spices and salt in large saucepan. Bring to a boil on medium-high heat. Reduce heat and simmer 5 minutes. Pack jars, then pour hot liquid over vegetables. Cool to room temp. Place lids and bands on jars and place in Refrigerator. For best flavor, let stand for 3 weeks.

@@MarysNest My pleasure. It was a recipe that was on the back of a seasoning kit from 2016. I checked everywhere online, and could not find a link. I think it would work with another dried pepper if that one is hard to find. It isn't as hot as Cayenne, with a bit of a sweetness, like Paprika.

I just made my first batch of fermented pickles 2 days ago. Can't wait to try them! I was wondering, if little pieces of of dill floats up, do I need to remove those? I think one pepper was floating, too.

Hi Joanie, that’s a good question. If you can’t get them to re-submerge under the fermentation brine, you may just want to scoop them out. At some point the lactic acid will be so strong that it will create an environment that’s not hospitable to mold and bad bacteria however it’s not a 100% guarantee. you want to be as successful as possible so if you have anything that’s not under the brine I would remove it. I fridge pickled 1 jar of peppers a few weeks ago and found that the jar sealed itself. Has this happened to you before and are they still ok to use? I don't think botulism can live in the vinegar, just a little unsure about using since the jar self sealed. Another great great option for apple scraps is making pectin, then storing it in the freezer. I want to experiment this year with dehydrating the pectin to see if a shelf stable powder is possible.

Hi Mary! Big fan here!!😁 I have done fermented veg a couple of times. The cucumbers always get too soft and this last time far to salty. Any tips? What's the least amount of salt that can be used per quart of water? Lastly, do we have to heat the brine? I don't think I ever have.....🤔 Thanks so much!!!

Hi Tina, All great questions. When you ferment, no, you do not want to heat the brine. To encourage your ferment to stay crisp, put a tea bag (black tea) on the bottom of the jar before you add in your veggies and brine. It won't effect the taste but the tannins in the tea, will keep the veggies crisp. You can also use bay leaves (you'll need about 5 per quart jar but they don't work as well as the tea bag) or grape leaves. As to the saltiness...over time the veggies should absorb more of the brine and become more flavorful, and the remaining brine clinging to the veggies should be less salty. However, even after about 2 weeks in the fridge and they are still salty, you can change your future brines by decreasing the salt by half and adding a quarter cup of whey. Hope this helps. Thanks for sharing. It will have to wait until I find my own place or our property is ready to move to, whichever comes first. There's not enough space for me at my mother's house. All of my clothing is in bags, my electronics are piled on top of each other, and my furniture and books are on her porch. I did manage to get out nearly everything I'm keeping from the old house. The final day is Wednesday. I just need to get my collection pieces and the binders and books that were on the bottom shelf of my video game shelving system. It has 3 tiers. I keep the tv and DVD player on the top shelf. My current video game systems go on the second one. The third will hold any future video game systems. I replay every game I play to completion so I keep all of my systems. I need to fix the Filipino carved nightstand as I accidentally ripped one of the doors of the cabinet when moving it. Also, Daniel broke the back of it off. I don't know if I'm going to fix that part or just use it to store a computer tower with the back open. Lee says we're getting all new kitchen items. Most of our bowls got broken so I needed to replace the dinnerware set anyway. Been wanting to switch over to healthier cookware. Think I will get the cookware set health guru's I follow recommend that comes with a rack to store the pots and a sleeve to store the lids. Plus it comes in blue and green which is my favorite color combination lately. We also need to find Daniel some new shoes. He now wears a 10 in men's sizes although he's 13 years old. He will likely be six-foot-tall or taller when he reaches his maximum height. My father was 6'0 and most of the men on Lee's side of the family are also that tall. Lee and his father are shorter than the rest of their kin. He doesn't like the pull-on sneakers we bought for him. I guess we need to find ones similar to what he wore in child sizes so sneakers with a Velcro closure. He can't tie shoelaces. Also found a brand that looks like a regular sneaker with shoelaces but actually zips closed and open but it's on the pricier side.

I also have some baby carrots and different varieties of colored cauliflower that are just a litttpast prime. Could I use the pickle juice that I already have with this recipe? I'd like to make some shelf stable as well so would I have to heat the pickle juice? 🙏 thank you

Hi Eraina, Yes, you can definitely use your leftover pickle juice for your brine. If you want to can these and make them shelf stable, you will have to follow a specific recipe that yes, will require that you heat the brine, since canning is more precise than if you just want to refrigerate your quick pickles. Hi Marie, great question. They’re at their peak for about 2 to 3 months refrigerated but can really last quite well for about six months. Just keep in mind that overtime they do begin to soften a little more. Great question. It helps speed up the pickling process. But yes, you can just pour some room temp vinegar over your veggies, refrigerate them, and call it a day. Love, Mary

@@MarysNest another question I use straight (ACV) vinegar and chiles, no refrigeration. Never goes bad. Infused vinegars. Can I do this with the okra? Is it too mushy to get pickled before it spoils if left on counter? I’m in no hurry. I just did some sliced jalapeños in straight ACV and minced garlic. Sits in my pantry where I move around the slices every now and then to make sure all of them are getting thoroughly immersed. No salt in these either. I hope to be able to pull out slices as we need them while they sit in the pantry.
