How To Record Audio In Audacity

I was using solo & even with unmuting all my mono tracks some of the tracks are blacked out. I see some recordings start minutes later rather than at the beginning. where did I go wrong?

It's possible that the tracks are blacked out due to a sync issue, try checking your project's start time and make sure all tracks are aligned properly!

When I record my piano it's hitting -27, which is not enough how do I record higher?
