How did you get the side piece out

It's explained in the first minute of the video. Pull up at the back and middle and pull back at the dash to release the retainer clips.

Any clue how to actually remove the thing entirely? Does the shift knob just pull off?

Wish I could help you on that one, but I don't know for sure. I would be careful so that you don't damage the shifter. All Kia parts are outrageously priced.

@@seriousmustangnut turns out that all you have to do is put it in neutral and pull up on it. Takes a bit of force, but it did the trick Alternatively you can pop out the cloth cover and feed everything through the gap in the bezel.
