Confirming this is for vinegar brine, this is why you brought it to the boil? Fermented brine would just be poured over?

You can keep it raw especially if you are going to reboil the brine.

@@sarahhtran Goid question. Why not blanch and shock the beans in ice water to preserve a brighter green color. Also, I helped my mom can. It's an art she kept going into her 90's. So I know there a couple of things that might explain why the jar used in this video didn't explode from the molecules pulling in opposite directions on the inside and outside of the jar: #1- a small part is the beans, being room temperature (or lower?) helped to cool the boiled brine; and #2- I'm guessing there was no need for sure conditioning wherever the video was recorded because that surely would have caused the jar to shatter. In my experience, we always used a second pot for boiling the jars lids, and rings before pouring in the boiling product. All were united as soon as possible directly from the boiling pots. Even a fan blowing on the Mason jars could easily shatter a still-hot jar and destroy the product. Not worth the mess-- but I don't think I ever saw it happen first-hand-- better safe than sorry though, right? I'm looking this up for a refresher before storing soaked nuts. All I know is that blanching them longer than one minute would defeat the purpose of buying them raw and destroy nutrients. Thank you for the lesson and be well.

Boiling the brine helps it penetrate the flavour into the beans faster. The heat will soften the raw beans making it easier for it to absorb the flavour over the week to 2 weeks.

@@sarahhtran thank you! I finished my pickles today and was like .... Can I just use this pickle juice for my beans I have just chillin in the fridge ?!?!? Then I came across your video . I went ahead and made it today! I couldn't resist tossing my favorite zesty juice

For a homesteader I’d think you’d appreciate someone who’s trying to be resourceful and get the most out of their dollar. We may be going back to the good old days soon enough.
