Perfect! Love my GA. Good tip using the time for the second batch of charcoal to rest the steak. I've tried doing the sear just with the coals already in there from the first stage, but it does need that extra burst of heat from a fresh batch. Great thing about doing this on the GA is so few coals needed overall, and you can shut them down quickly at the end to reuse another time.

Can I ask how you shut down the coals to use them next time? What does this mean? Thanks so much!

@@mdvarughese9362 I mean if the briquettes are still quite big then when you close all the top and bottom vents they stop burning. Next time, I can then put them back in the starter chimney (maybe with a few new briquettes as well) and heat them up again for more cooking. Does that explain it?

Talk about killer seasonings!!!! we did this last night with 2 2 inch thick poerterhouse steaks. OMG it was the bees knees. Keep up the great work. also ill have to show you a shot of the croccs we got after you gave us the low nslow basics Jibbitz as Syd Meatstock this year. Also any new flavours of Jerky coming out as I fear were gonna eat you out of the remainder of the jerky you have. Also cant wait to taste the Chilli and Citrus rub you just came out with!!!!
