Das schaut wieder klasse aus. Ich habe gute Erfahrungen damit gemacht es nach dem indirekten grillen noch 5-10 Minuten ruhen zu lassen und dann direkt zu grillen 👍👍👍

I don't understand the resting... It leaves the meat cold. I want the meat warm! :/

It´s also not necessary with reverse-sear! For me it is just better, when you let the me.at rest

Generally speaking resting a steak is the way to keep the juices from drying out, it lets the muscle fibers relax back into a slack state so the moisture stays in. As Christian said, in this case it's not necessary since the major selling point of a reverse-sear is that it helps lock the moisture in from the start.
