Picanha ( sirloin cap) … is my new favorite … even ahead of ribeye . I do it same way as you … smoke first and then high heat grill at the end . Amazing :)

I pick up my Pit Boss 850 Pro Series last night and will assemble it today. I’ve been binging you vids for a week and can’t get enough! Any advice on how to go about the initial burn and what a good first cook would you recommend? Thanks

I would follow the burn off instructions in the manual, or check out my 1600 initial review and burn in video! I personally would do chicken or ribs for your first cook!

Are your temps different on your digital screen vs. the guage on the door? Just bought my first pit boss!! Your videos are great keep it up !!!!

Well the gauge on the lid is higher, so it does differ some. I go by the digital controller. Thanks so much!

Always use a meat thermometer. Lid thermometers are pretty much only decorative.

Whenever I sear picanhna, I always get some pretty serious flare-ups and end up essentially searing the steak in grease fire. Is that bad?
