My mom just brought me back a bag of Hatch grn chili. I was expecting #10 of roasted & frozen, but they are fresh. I've roasted my own on gas & charcoal for years after first experiencing & falling in love with them & now I can't get enough despute the 1000 miles to Hatch Valley. Glad to find other folks that are passionate about good food & these delicious Chilis. You mention burgers which is how I ate some I just thawed out tonight! One of my favorite though I rarely ever have it is a green chili apple pie or cobbler with some quality vanilla ice cream! The combination of sweet, heat, smoke & the richness is just Heaven!

@@americanbadass6498 Everyone has their own method! We are just sharing ours. Lots of people use the paperboy trick, but we try to reduce our impact and just use the water, much less messy too!

they grow well here in Missouri too. Didn't plan on growing them but my wife picked up the starter plants by mistake.

@@freshchile Yes, they turned out great. 👌🏼We bought the chilies from the Fruit Basket on 4th. Problem,perhaps you have a suggestion: when I got home, the mild to hot chili was mixed-up between bags so how can one distinguish the spicy "hot" to a "mild" chili when they all appear to be the same? I tried the usual "look it up" web search. Again, love this video, God bless

@@user-lu4qm3cs8i unfortunately at that point you are stuck with sampling it to know for sure! We asked our farmer that question once and he just smiled and said you have to taste to know! Different breeds of peppers can have "average" differences but there is a lot of crossover and when they get mixed up you can't know by just looking which heat you have for sure!

@@freshchile For the record, and forgive me, but I was looking at the best way to roast Hatch chili and this video was first so I simply viewed it and followed your method - OKay, now for the forgive me part... little did I know you actually own Fresh Chile Co. Thank you!! I just bought some hatch chilies and i wanted to make sure that I roasted them right! What an awesome ice water trick, makes sense since you do the same thing with other veggies and fruit. I will be a roasting fool!

Lol, didn't realize how old a post I was writing back to. I likely put the fiber to your house! Used to do that work awhile back, under ground (boring) and below the power on service poles. I fell in love with Santa fe for all the wrong reasons and Pecos for all the right... plus Zuni, Vander Wagon, and many more places not well known by norther Hill billies like me.

I love this video. Going to try it right now with the haul from the garden. Colorado born and bred but I can handle a jab...especially when you don't tell me to put these beauties into a plastic bag for four hours (who thinks that is a good idea???).

Once again I've tried roasting my Hatch chilis when I can get them. I had to use my oven, but did not do the ice water thing had a mess, they got to done and it was hard to keep the flesh together for Relleons. I've tried using a grill but it's too HOT outdoors in Nashville. By the way, there is no good Texas Brisket here either or Tex-Mex. I have spent time in N.M. and learned to love the Foods but you can't get them in Tn. it's a very limited place. It's a lot of work to make Relleons, so I Roast them,Stuff them and freeze them to eat in winter.

Brilliant. Thanks. Yeah. Gas grill is tougher because you lose heat when the lid is open contrary to the wood/charcoal burning.

This was really good! We just got back from a NM vacation and I'm getting into doing the green chiles on the gril,ll but I didn't know about having the super hot grill and then using ice water. Mine are a bit cooked and limp but still taste good. I will have to run out and get another batch of fresh ones now and try this method. Thanks for sharing your technique! PS. You have a very nice wife and beer glass! ;-)

Great tip about the ice water! My question is, if I want to make rellenos a few months from now, what is the best way to treat the fresh chiles now... roast, peel, seed, freeze in ziplocs now, then defrost later in a few months when it's time for rellenos again?

I’m a newbie to chili roasting. I was wondering wether to go with the ice water method or the steam in a bag method of peeling them. If ice water stops the chilies from cooking then that’s the way for me. Thanks for your help!

I tried the ice bath method today and it worked great! Chile meat stayed firm and delicious! Thanks for the pro tip! In the PNW I’m pretty new to hatches but they are definitely delicious! My only question is what is your go-to technique for removing the seeds ? Thanks!

Hopefully you've figured this out by now, but simply cut the cap off where the stem grows, split the chili, & remove the seed.

I just tried roasting chiles on a large 2 burner campstove. It only takes a minute or so to blacken my chiles. Which by the way I bought thru you. If the chile skins are completely black are they over cooked?? I try turning them but sometime cannot keep up.

While putting them in ice water works very well, you lose a lot of flavor in the water. However, if you do do that, you can use the water for making broth or to cook with, such as if you're making Colorado green chili. just strain out the skins

Actualy the only way to get the best out of roasted chiles is to have one of the "custom roasters" that they use in NM for roasting 30 lbs at a time. SUPER hot flames and then STEAM for at least 30-45 minutes in a plastic garbage bag, then refrigerate and peel or just freeze whole. "Home roasting" will never get the same flavor and cooling/icing too soon is not preferable either.

To me the green chilis are 10 x better than a bell pepper. I quit buying bell peppers ! Started growing the green chili to replace bell peppers
